Chicken Katsu Ramen Recipe
Ingredients
For Chicken Katsu:
2 boneless, skinless chicken breasts
Salt and pepper, to taste
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
Oil, for frying
For Ramen Broth:
4 cups chicken broth
2 cups water
1-inch piece of ginger, sliced
4 cloves garlic, minced
2 tbsp soy sauce
1 tbsp miso paste
1 tbsp sesame oil
1 tbsp mirin (optional)
Salt, to taste
For Ramen Bowl:
2 packs ramen noodles (without seasoning packets)
Soft-boiled eggs (one per bowl)
Green onions, thinly sliced
Seaweed (nori), sliced
Corn kernels (optional)
Bok choy or spinach (optional)
Sesame seeds, for garnish.
Instructions
1. Prepare Chicken Katsu:
1. Season chicken breasts with salt and pepper on both sides.
2. Dredge each piece in flour, dip in beaten eggs, and coat with panko breadcrumbs.
3. Heat oil in a frying pan over medium-high heat. Fry each piece of chicken until golden brown and fully cooked, about 4-5 minutes per side.
4. Transfer to a plate lined with paper towels to drain excess oil, then slice into strips.
2. Make the Ramen Broth:
1. In a large pot, add chicken broth, water, ginger, garlic, soy sauce, sesame oil, and mirin.
2. Bring to a boil, then lower the heat and let it simmer for 10-15 minutes. Stir in miso paste until fully dissolved. Season with salt as needed.
3. Remove the ginger slices and keep the broth warm on low heat.
3. Cook Ramen Noodles:
1. Cook ramen noodles according to package instructions, then drain and set aside.
4. Assemble the Ramen Bowl:
1. Place cooked noodles in each bowl, pour the hot broth over the noodles.
2. Top with sliced chicken katsu, a soft-boiled egg, green onions, corn, bok choy, and seaweed.
3. Sprinkle sesame seeds on top for garnish.
