My wife and I spent a week in Istanbul in January a few years ago. Had a great time, less tourists and it was low season for hotels and dining out so we saved money and personally we enjoy a bit of colder weather than Houston normally sees. We did a private cooking class where our instructor met us at the market on the Asian side to buy our ingredients, then cooked a dozen dishes and ate at her home. Also did a walking food tour where we spent the day walking, eating and learning about the different neighborhoods and cuisines. I contacted a private tour guide before our trip; I didn't want the typical tourist tour of major sites but a photographer's tour. I wanted to see crafts people at work, he took us to a rug maker, a coppersmith and a shop that made custom leather goods. Got lots of good environmental portraits. We used public transportation, it's great and did a lot of walking.
