On those double pocket frames, I always ran a string from corner to corner of the framing to make sure it touched in the middle so i knew I wasn't out of cross sight and the doors would come together in the middle as intended.

Wish I could have been there to tell you, "that header is not level!" Just as you said , "Perfect, we've got it right where we want it," the right side dropped down about a quarter of an inch and you followed up by screwing the whole unit in place. Not to worry, you'll find it when you attempt to install the door and find it want's to stay in the pocket.
As a Finish Carpenter, I always think, If I was installing pocket doors I would put them up 3/4". In order to get the doors back out, I give a minimum of a 1/2" to F.F. Preferably 3/4" Most pre-hungs are 1" off finished floor if you install after the floor goes in. What do you think?
We generally go 1/2 for bedroom doors, 3/4 for bathrooms and 3/4 on pocket doors. Just wondering, are you saying you dont cut down your jamb legs when installing pre hungs on ff?
2 and 3 guys to set a cavity slider? How do you get anything done? I install these by myself (cause i have to) 5 -10 minutes per door. Never done a mantel though. Doesn't nget cold enough to have fire places.

When we used Pocket Doors, we applied 1/2” Plywood over the frame for extra stability.
Once you hang the door the frame will shift. Your trim will have to be shimmed along
with adjusting the door hangers to eliminate any gap between the door edge and jamb.
Over time the building will settle and shift thus requiring readjusting the door hangers.

Preinstall header shims/bucks level based on the high side of your floor.
And make sure you temp in a gap filler presheetrock

Sorry to troll you one this one, but 5:40. As a commercial carpenter 1st. It bothers me to see someone framing a (wood) wall and set it at the bottom plate (on the line) and check it at the bottom with a 4" or 6', then proceed to checking the top half and decide to adjust it because of a discrepancy, When framing with wood, you will have a 1/4" in (most) all wood, because it has a 1/4 bow in it. Even when you cherry pick and crown them at the bigbox store. After you install them in an uncontrolled environment, go back and check it after it rains, or a change in the temp. It will bow. **YOU MUST CROWN THEM**
However, the head of the pocket door will level true due to its length and grade. So you are correct with zero tolerance as shown [5:40}

There's a super good aluminum pocket door frame but they run over a grand, but you get what you pay for.

If I was the client I would be using a HD Pocket Door hardware or nothing else. The quality is far above anything else, except maybe Cavity.

It's a personal policy of mine to not work in a house that doesn't have lights or power. By the time you're getting the finish carpenter involved, that's on the builder to have power by then. In my area, builders need us more than we need them, so they always oblige.

Don't bother. Just buy Cavity Sliders for your pocket doors. Easy to install, all aluminum construction that won't warp under high changing humidity. The ball bearings make even the heaviest doors a breeze to open or close and they have soft close/soft open options. I went through this exercise a year ago and settled on install 5 Cavity Sliders for our new home for very heavy 8' slab doors. The better hardwood pocket frames cost the same or more than Cavity Sliders, so save yourself the aggravation.

Get a Stabilla level! That thing kills my ears!!!!
That is a new electronic Stabilla , they are useful in location that are hard to see
I've never seen an install take so long and two people.
