    If you are worried about the sugar levels in the sweet potatoes, one thing you can do is after you cook them is to store them in the fridge. Then when you are ready to eat just take one and heat it in the microwave. The process of cooling the cooked sweet potatoes lowers the glycemic levels and it won't spike your glucose levels. Some sweet potatoes and unsweetened goat yogurt with walnuts on top sounds great.
