    Long time sauerkraut maker here and I think you might like this tip. I sometimes add a thumb size piece of ginger sliced into julienne sticks to a two quart batch of SK for an interesting variation.

    I did it! Two jars of pickles fermenting, two jars of sauerkraut and one jar of carrots. So excited!!! Oh and two qts of pickled eggs in fridge. So proud!

    Did you know Carrots are great for detoxification and hormone balance (for women)? If you have wacky periods e.g heavy flow, painful cramps etc, try eating one carrot a day 🥕👏🏽!

    I started with the carrots and the kids love them. We actually call them pickle carrots. 😆
    I've fermented quite a few things in the last couple years because of you Stacey. ❤️ I don't do anything with peppers anymore. They get mushy.

    I made sauerkraut last year for the first time and it turned out great. This fall im going to try more fermenting. I will definitely try this combination sounds delicious. I have been doing good in the garden but the storing is where I need to work at. Fermentation will take care of some for sure!! Thank you 😊

    My fermented beets were too tough, but I know I filled the jars up too high, but cabbage and all did great. I enjoyed the info and can't decide if I loved the rain sound most or the sheep nosing up to the kitties or even little Forrest's tail going100 miles a second while he was feeding. It is all good! Thank you, Stacy. (I'm enjoying my chocolate tea, btw)

    I now know how to ferment, thank you Stacy. I love making 'purple' ferments. My favorite is: chunks of red beets, red (not purple) cabbage, and Pusa Asita (or other variety) purple carrots. I add black peppercorns, whole cloves, fresh ginger, star anise, and a small cinnamon stick (plus the salt, of course). Sometimes I'll take a fermented jar of it, drain the liquid out, keeping the whole spices, and refill with filtered water and a tablespoon of sugar, shake it, place it in the frig for a day or two, and it becomes a slightly sweeter treat that's gone in no time!

    Just did my first ferment. The carrots. Saw doug dig into them in another video n he said kids loved them. I get pickled cauliflower from the deli so i know i like pickled foods. Its summer so im checking them in about 8 days. I wished that i had a garden this year to get all the ingredients from there. But it only took about 4 carrots for a quart. Thanks for the help. I shared with 2 other people who are trying to improve gut health deteriorated by SAD diet. 😔 Thanks so much!

    Another wonderful podcast. My 2 favorite way to preserve my food is fermentation and dehydration. I have purchased everything I need for canning. Both water bath and pressure canning. I haven't started yet, because I am a hands-on learner and looking for someone knowledgeable to work with me first to build my courage. Love, Debbie

    Love Fermenting And peppers are fav to ferment. Just made Steak quessadillas with my fermented peppers. and I immediately wanted more. Those peppers made it. And I use cabbage leaves to keep the veggies down if I don't use the weight.

    thanks, I'll have to try that. I don't really know what I'm doing but I started a batch of kale, shredded carrots, onion, garlic and parsley fermenting yesterday. I've never heard anyone talk about fermenting kale but I harvested a bunch of it and decided to try doing similar to sour kraut....we'll see in a couple weeks if it's edible lol

    This is my second fermenting project. I made a ton of purple sauerkraut in April and it’s delicious. My son-in-law ate 3/4 of a small jar in one sitting. Tonight I am making fermented carrots and I imagine I will have several quarts of them. I’ll let you all know how it turns out. :)

    We are all aware that to live the way you guys do is not initially cheap... acreage, is not cheap...I know something about it, as I used to have a flower farm. Mechanical tool , be tractors, this and that is not free...basically everything cost money. Your knowledge and initiatives, those are free...thanks for sharing . Respect. xo

    Just finished making saurkraut and it was AMAZING! I was so scared, but thanks to you I took the leap and even gave a jar to my neighbors. I am so grateful for your channel...I always look forward to seeing you every day ❤️ I just bought a bunch of veggies to make the vegan broth...if only this wind would calm down!!!! 6-8 hours on a windy day and a woodstove is a lot to ask for but we'll get it ✔️

    Stacy, I loved watching you in this video! Thank you so much for making it. Because you inspired me, I have ordered 25 lbs of Redmond Salt and am expecting it to arrive any day now. I plan on fermenting vegetables for the first time, and I'm 54. Our family has various digestive sensitvities, and I'm hoping it'll help with that and put us all on a road to better health. I also ordered your book on fermenting and am expecting it in about a week. Thanks again! I watch yall's videos almost every day and enjoy them very much as well as share them out with my loved ones.

    Stacy I just found your channel a week or two ago and have been binge watching everything! I love your story and your passion for health. I ordered a fermentation kit from Masontops using your code just now, thank you! I also ordered your cookbook and some of your chocolate tea. I'm so excited! I just started some seeds for the first time in my life and planning to transplant them into a Greenstalk tower garden after my last frost date (zone 5b here in Nebraska). Anyway, just thought I'd drop you a note to let you know I've drank the Kool-aid...ready to do my own ferments! WOOHOO!

    I tried the carrots a couple years ago. They had that stuff on the top and I thought they were spoiled so I threw out both jars! I had no idea. Well I'm ready to try to do them again, so wish me luck! :^)

      Well my time was up for my carrots so I took the lid off today and it was covered in mold! I'm so disappointed! I'm not sure what I am doing wrong. This was about 2 lbs of carrots this time. :^(

      Do you sanitize your jar first? Peel the carrots? Remember to keep vegetables under the brine at all times. I used an onion or jelly jar. Also keep away from light.

    My mom and I love your channel!! I bought your fermentation book and the mason top kit. I just started my very first batch of fermentation using carrots!!! Can’t wait to see how they turn out. I was amazed that it started bubbling just a couple of hours in. I’ve been saving apple pieces to do ACV next.

    Hi Stacy- Finally! A fermented vegetable combo that " calls" to me ! I have everything but the tamper and just ordered it. Those glass discs and burping inserts ( pickle pebbles and pickle pipes) do make live easier. Thanks so much for sharing this simple, but delicious looking recipe. I know ferments are good for you.. Do you have a recipe for an easy tea? This was a helpful, healthful video ~ Diane

    Started our first jar of ferment carrots today! My 1yr old son enjoyed helping layer the carrots, garlic and onions, then helped pack it in. Can't wait to try it in a couple weeks!

    I have a jar of carrots in my fridge from carrots I harvested last fall as well as a bigger jar of sauerkraut (using purple, love purple), I have them daily and when I forget (because sometimes I do), I miss the crunch and the taste of fermented and I usually end up having some as a desert LOL

    Stacy is there anyway they can be fermented in a slightly sweet brine? I am not a fan of dill or sour pickles so I am wondering if the addition of a bit of honey or maple syrup would work without interfering with the fermentation process?

    Fermented carrots are my favorite fermented food! I like them cut in sticks and fermented with minced garlic and jalapenos. I have a half gallon of fermented red/purple cabbage that I just moved to my fridge. I top salads and other dishes with it.
