  • We do a lot of dessert soups in Thailand (and there is more on this in my cookbook). There are both hot and cold soups, and this is one of my favourite cold ones! Also known as melon sago, this dessert is made from tapioca pearls, melon, coconut...a must try combo! If you lime mango sago, you'd love this too, and you can even substitute mango for the cantaloupe or honeydew melon.
    It's a magical combination of aromas: the sweet ripe melons, coconut water, coconut milk and pandan leaves. I especially love the way the tapioca pearls slip and slide in your mouth, which makes it so fun to eat! Cold, refreshing, light, and just mildly sweet, this is the perfect summer dessert, or a light and sweet ending after a big meal!

    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the RUclips channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via RUclips videos, her cookbook, and cooking classes.     I made this today. It was a super hit with my children and my grand children. My daughter in law said that net time we have a get together after the lockdown is over I should make the desert for the guest. Sure I will do that. A few days back I made the Pad Thai with your recipe and it was a hit as well. Today I went to the Asian store and get the flat rice noodles and I will be makeing Pat Thai again tomorrow and with that will be Pandan chicken as well. (I found Pandan leaves).

    Dessert soups are extremely popular in Sweden as well. "Sago soppa" is an old time dessert that is extremely easy to make. Water, sugar and tapioca pearls are simply boiled together and the run off starch of the pearls thickens the soup. Fruit is added in at any point depending on the firmness of the fruit and desired texture of end result. It is fantastic with rhubarb or strawberry. It is also delicious when made with rose hips if you live in a climate where you have wild roses. It is finicky work to clean rose hips but if you want to surprise someone with something a little exotic, rose hip sago soup is probably something noone has tried before.

    Why not add the coconut water after the coconut milk soup is cooled...that way you dont destroy the nutrients...... Weeeeee.....love how she does that

    No Pai, the number one problem of this recipe is I ate them all in one evening hahaha so delicious! even though I used evaporated milk instead because I didnt have fresh milk on hand. Love your videos!

    I grewup living in Thailand and I loved eating this dish of chicken feets with lots of pepper and green onions and cilantro. Almost like a laab. I would love to see your take on the dish! ☺

    My grandma always makes this. Here in Brazil we call this "sagu" :) I love the sensation of the little tapioca pears when I eat it

    sawadee krap. could you pls tell me how to make salak sweetsoup, i enjoy 1 time in bangcock. but i dont know how to make it! some salak fruit with sirup (salty and sweety) add chipped ice... it is really delicious, and make me remember tasty of bangkok

    We have something like this in the Philippines but it's more of a drink than a dessert :P
    We blend the cantaloupe with the broth in the blender to make a smoothie, add tapioca pearls and add juiliened cataloupe in it :P

    I wish i knew before hand that melons become bitter after its mixed with MILK!!! I just made this at home and the water/coconut milk/milk part was delicious!!! But turned bitter after i added my honeydew 😭 tomorrow im gonna just do the coconut milk

    I have to almost constantly stir whenever
    I cook tapioca
    even with the boiling water, non stick pot, a small amount of oil,
    it still sticks on bottom of pan
    if you don’t stir

    Trouble Shooting Question : I get coconut milk in the can, but it's usually somewhat solidified, they don't look as milky as yours. Are they okay to use or should they be heated to melt it first?

      the milk cuddles..it is still ok when you boil the whole liquid...it will become watery again.

      Literally the same. In Thai, we call it 'Sakoo' which is from the same root.

      It is called "sago" in many parts of the world (Sweden for example where it is a form of the Swedish word for fairy-tale, pleasingly).
