Girl I’m so glad I saw this video. I legit watched it last night, did everything you did and bought the Zatarain’s fish fry from the grocery store this morning! I thawed the fish, cleaned them, mixed the fish fry with pepper, old bay, and parsley and it was done it no time!!! It was so good 😍😍😍😍
Hi, Whiting is good white fish .. ppl don't realize how good it is. I do have a hard time getting batter to stick to the skin side .. doesn't matter a lot, but leaves a lot of cornmeal in the pan which I have to filter anyway I guess. Oh, I don't like hot spicy things, but if you put red pepper in the batter, the frying really tames it down a lot. Don't put a lot in ... prob like 6-10 taps from a large jar per 1 1/2 of batter. I use plain cornmeal with salt and pepper. Also I put to fish together skin side facing out and squeeze some of the water out, not dry, but frozen fish usually has to much water in it. Its the best way Ive found to get it just right moisture wise. Id use plenty of paper towels and stick it in the oven. This is deceptive in its oil absorption .. it appears not greasy, but put it on paper towels and keep it warm and A lot of oil comes out, not to mention you can tell the oil went down in the pan a lot. so let it sit on at least a couple paper towels while keeping warm and they'll likely be full of oil that you cant see on the fish...
thisonelife x I like to cook whirling bone in, the larger fish you can make 3 pieces by cutting the fish in half lengthwise wihe the top half, and the tail end, then cut top top half by cutting along side the back bone Ang splitting in in two like you split a chicken breast giving you 3 pieces from one fish!

Pj Danita I like making my own coating using cornstarch and cornmeal then add garlicky powder, lemon pepper, onion powder cayenne pepper and curry powder, combine them all coat fish, fry and serve with lemon and or lime wwdges, starter and hot sauce wiry salad and fries!

JaSonne Moore You can place some paper towel in the bottom of an aluminum pan and place the cooked fish in it as it comes out of the pan and place the pan in the oven. Aluminum holds heat very well. Do not cover the pan because it will cause the fish to become soggy. Hope this helps. You will probably need two bags of the fish seasoning for 15 people.
That looked really good & I just realized that the video was done a while ago, but has anyone noticed that whiting fish smell is getting more & more pungent lately. I used ti buy the 5lb boxes in the grocery freezer, and they were so strong smelling that I didn't even fry them, just threw them out. The next time I purchased some fresh from the counter, got them home, only to find that they were smelly too after a couple of hours. Maybe soaking in vinegar beforehand?

I love whoring fish the bones are in a strip like the spinal cord and not throughout the flesh. I prefet to cook fish on the bones, it gives the fish more flavor. If the fish is smelling it is not fresh probably has bee frozen and defrosted. It is hard to find fresh. Most stores only have fillet. And if you ask for it at the fish market they have usually sold out of the fresh, but they have 5 LB box frozen which are usually not good.
I usually fry Swai fish but now I can't find any, so I was looking to eat something else and you've convinced me to try fried whiting. This will do it for me. I havent had fried fish since February of this year. I can't wait.

Leave your fish in the batter for 20 minutes to attach itself better. If you're loosing oil, watch your temp

Zatarans is less salty than other batters use a egg dip before you coat I usually do with catfish
