    Grow up people, and don't insult this talented and creative young man! He doesn't say he is making sujuk. He says he is going to show you "how to make sujuk kebab", get it??? He uses all the necessary seasoning for sujuk making and then he calls the kebabs with this name. I think he does a very good job, because they look very tasty in the end. If I ever go to Sydney again, I will definitely visit his restaurants. Eline saglik yavrum, cok becerikli oldugun belli.

      there is something like this in turkey, called homemade fresh sucuk cooked as i please (here he used skewers, i sometimes do, but i prefer making patties and cooking as i would cook köfte.)
      but no, this cant be bought as far as i know.
      (well, sure if youre good buddies with the butcher making sucuk, you can buy the fresh sucuk dough by kg)
      ben evde bunu kendim yapıp, köfteler halinde dondurup, canım çektikçe çıkartıp yiyorum, hem daha ucuz hemde içinde ne olduğu belli. bundan daha ucuz sucukta ne olduğu allah kerim. tavsiye ederim.

    I’m Filipino and have been surrounded by only Filipino, Japanese, Hawaiian, and Korean cuisine for all my life since I live in Hawaii, so it’s really great to learn about more cultures and their cuisine :)))

      Dude, if you just visit the Middle East, Turkey,Egypt,Jordan,Saudi Arabia, Morocco (North Africa),Tunisia, well...you'll be so impressed and so fascinated by the Religion (*Islam*), culture (Turkish,Arab,Berber/Amaziegh,Kurdish..etc)
      arts, music, foods, people.
      I hope you can make it bro.

      if you live in hawaii you might wanna try puerto rican food. some of the ideas are somewhat similar to hawaiian cuisine, but with a very different spice set. you might like it(or not, food is very subjective).

    Made this tonight and the family loved it. I used ground garlic since I was too lazy to mash the garlic. 😂I only had those small bamboo skewers but it worked fine. The meat didn’t fall out. I did form it more the way the Vietnamese form their ground pork skewers.
    Looking forward to trying your other recipes. I am so glad I found your channel!

    It is really hard to understand why people are whining so much about names or pronunciations. As we share the geography, we share our cuisine too. Same ingredients goes into our foods, we affect each other's cooking style, and all of this did not happen overnight. Turks, Persians, Arabs, Armenians are living in the same geography for more than 1000 years. So please stop unnecessary national praising, we share more than we think. Thanks for the great video btw, it looks very tasty and juicy.

      It is so interesting to me, how will be changed your attitude to someone, who brakes into your house, kills your family, stills your food, your dress and then blames you, that you are a thief? So nothing Turkish is here. I don't care where I am and whom I am toking with! I will say it everywhere NOTHING TURKISH IN THIS KEBOB. THE word kebob is also not Turkish but has Persian origin.

      Suren Keryan i sympathize with the point you make about empires coming in, appropriating cultures etc but the thing is that with these foods first of all dominating empires were not worried about stealing food recipes but instead more valuable resources like land and wealth and also these recipes were transferred and formed in an era where there weren’t many borders and “turkey” vs “iran” wasn’t a huge distinction

    Delicious! I made a lazy "poor man's" version of this on an electric grill/panini press (with no skewers) and it was very tasty but It'll be on a BBQ grill next time. I love the combination of flavors and aromas. Thanks for sharing!

    I usually keep the onion juice in a separate bowl, and when I shape the kebaba i deep my hand in that juice rather than water.

    that is great, thanks! just for clarification, some folks claim that this is called Adana kabab, or Urfa kabab, or simply kofte, but not sujuk. Well, what makes a skewer of meat Adana or Urfa (besides the shape of the skewer) is the spices in the meat. Accordingly, we can call this Sujuk kabab bacause of the spices, and that is exactly what Henry is calling it. I am sure he knows what sujuk is, or for that matter, that a kind of sausage with some special spices is what would come to the minds of some Turkish folks here. And yes, Henry's spice mix is just one example and I am sure some folks will object to his spice selection as well claiming that this is not authentic sujuk and that is fine... I wish all the fights in the world were over what makes a chunk of meat sujuk, what a true baklava is, or what the right batter for fish and chips is... thanks chef!

    Looks very tasty and juicy. The name of this kabab is Adana (Urfa) not sucuk as far as I know. Also the way to cooked it is more like Kabab koobideh (from Iran). Sujuk (turkish:Sucuk) is a Turkish sausage which has so many spices.

      Turkish sucuk has to be much more mixed and sticky. You’ve to see fiber pattern on well mixed meat.

    Only had this style of kebab once from a takeout place, with little flat bread squares that you'd essentially make little tacos with, with heavily seasoned basmati rice. Watching the recipe and seeing that it's something that could reasonably be made in a typical home kitchen makes me very excited to try this

    lol all turkish people said "it is not sucuk". i am also turkish and i can confirm it is a quick sucuk. this is also how i do in my home. Traditional sucuk has a drying and filling process but taste wise won't be a huge difference. Great work, keep it up man.

    This is a very common recipe from middle east and caucasian parts of the world. It does not worth to fight whose recipe is this. But for most of the world this recipe know as a Turkish recipe. There can be very little difference between cultures but after all this is a very simple and extremely delicous dish. And you make it very good.

    Wonderful to have found this! I used to work in a Mediterranean restaurant yrs ago on Sydney Rd and have always enjoyed all the Mediterranean food! Missing this ever since the restaurant closed. I will definitely try this!!

    Wow. This looks so good. I visited Istanbul back in 2000 and I must say the food was the best I’ve ever had. From the soups to the deserts I absolutely miss it. Not to mention the people were also the friendliest I’ve met.

    This is an amazing recipe. For authentic sutzuk flavour you also need to fenugreek, for a kilo of meat I would add hald a teaspoon, as very potent.

    I’m so happy I subscribed to you a long time ago. I’ve been to Turkey three times and this last time I understood the food better. They have a variety of delicious foods and I like to cook in my RUclips channel recipes from different Countries. I’ve been thinking about cooking the kabob and I saw you preparing it. It’s not that hard. I learned how to make Hummus with Tahini and everyone loved it. I’ll combine the kabob, the bread, salad and hummus and even prepare Turkish tea which I bought from there. I dress up with the clothe they wear for the introduction and then start cooking. Thank you so much for this video.God Bless You always 👨‍🍳

      a tablespoon of tea leaves for me, a teaspoon per person for the rest, excluding mother, she gets to have a tablespoon of leaves for herself.

    I dunno if you have sucuk kebab in UK but this is definately not genuine Turkish kebab. The way you make it with onions, cumin, salt and pepper (no other spices) is called Inegol kofte. You should make them in the shape of fingers thin and long. Anyways, and another important thing, kebab is made with lamb and much more fat. No ground beef, thats a hamburger and not Turkish. Oh and of course I always respect food and people who make it, so great effort my friend.

    i am a Turkish and i am eating and cooking sucuk , sucuk meatball and sucuk kebap all my life , and i am saying that ; 3 crushed garlic is NOT enough for 1 kg meat ... and meat should be 70/30 ... coriander is optional .. we are using that spice , rarely .. especialy arabic people loves that spice usually .. The thing that gives kebab flavor is the meat's "own fat". It should be a fatty meat. the meat you are using is very low fat..but your preferences and measures are your masterful interpretation. I respect .

    It's not a Sucuk !!! Sucuk is a Turkish Salami from Cow meat , this what you make is similar to "Adana Kebap" ;) ...sorry but its wrong what you write ... please write "Sucuk" than you now what I mean ...

Adam Kiyma ile sogani karabiberi ve kirmizi bberi ve sarimsak koyuyor ... ne sucugu bu??? sucuk pastirma gibi asili bir sekilde havada kurutulur vs... yani icerigi benziyor diye sucuk kebabi diye bir sacmalik duymadim hayatimda , yeni yeni fantezi yemekler üretiliyor :))))

      güzel kardeşim sucuk yapılışında soğan hariç diğerleri koyulur zaten. senin bahsettiğin sucuk bağırsağa koyulur fermentasyona bırakılır. adam aynı malzemeyi kullanarak bunun kebabını yapmış. sen de biliyorsundur ki sucuk döner de var. adam başına turkish koymuş mu? koymuş. gerisini siktir et sen bizim olduğu belli olsun da napıyorlarsa yapsınlar.

      Ensure the meat has good amount of fat as this makes it sticky, make sure you cook at a high temperature so it seals the meat on to the skewer

      Mine keep breaking and falling. I've used the fatty meat, super hot grill, and even tried adding an egg. Can you please explain in detail the skewing technique that you follow using your thumb for impression lines?

      A)I am a ghashghaee Turk but I don’t speak Turkish because I grew up in America.
      B) the name Turk was created by the mongols as an insult.
      Mongols were very nationalists and they didn’t want mongols to mix with other races.
      If a mongol mixed with someone they called their children TOKI which is an asian bird which has white feathers and long legs and their head looked like a vulture.
      But. Mongols didn’t go back to Mongolia and in time they all got mixed and TOKI became TORKI and TURK.
      Turkish people are like Spanish people, many countries who were captured by thee Spaniards and speak Spanish . Spanish is not a race .
      Kazaks are Turks , Uzbeks are Turks Azaris are Turks and ghashghaee are Turks but they go by their race like kazak and Uzbek .
      Ottomans were from Kazakhstan but they didn’t call themselves Turks . They called themselves osmaniyan .
      Turkish people say Turk Turk Turk because they don’t have a race. They have 43 races in then They have to say Turk .
      Turk is not a race.

      their is some difference in written but pronounced as Sujuk ...Like Murad is well known name and It is written in turkish as Murat but pronounced as Murad So in turkish language few alphabets pronunciation is slightly different than English ...For Example Jan is written Can but pronounced Jan in turkish language
