im a french pastry maker yes you can use you hand to mix when the quantity are that big but you could you use a big glove too that thechnique is to loose the less air possible in the dough and make it perfectly mixed

其實專業師父在作都是徒手攪喔，主要是手感問題。他們做的時候都會洗手，而且蛋糕高溫烘烤也就殺菌了。
以前我們烘焙老師有說過。（也有人嫌戴手套會有塑化劑問題啊）
外行才會對徒手驚訝，那些國際甜點師傅做甜點也根本沒戴手套，一堆自以為的在講手套的事，他自己的爸媽做菜也沒戴手套啊 ，有甚麼好大驚小怪的

@@1eatfirst1 because it's very unhygienic! Just imagine some hair from his arm gets in the batter...so disgusting! when you work with food you have to be more careful. I felt nauseous after watching that. don't want to eat it even if you gave be a piece for free!
@@senika Its actually very unhygienic to wear gloves in a bakery. Thats how you get glove bits in your bread. Plus you'd have to change them every time you use them, so you might as well just skip that and wash your hands.

Making this kind of cake you must use you hand to mix or you will end up over-mixing that batter and loose all the air bubbles which means you won't achieve the fluffy spongy cake. It's not disgusting. I said this because I used to work in the bakery

You will find on many cake mix boxes it will say mix for a certain amount of time or until blended. Mixing too long or too strongly will ruin the batter.

Lada Más ahora con la pandemia, también me lo pienso y siempre me fijo si en el local o el puesto de comida tiene su gel anti bacterial como mínimo, si están usando cubrebocas. Porque he visto de algunos que traen el cubrebocas o de adorno en el cuello o lo traen todo sucio lleno de mugre de que no se lo cambian o lo lavan. Y ne mejor 👎

How come theydont wear gloves uponcooking and when they are cutting it.. they use gloves??
Because you don't need gloves before the baking because the bacteria will still be killed during baking (of course they wash their hands obviously). And it's more higenic for them not to use gloves because the bacteria is inside of them if they don't replace the gloves once an hour and that would just be not environmentally friendly
