Recently I bought a large jar of smoked paprika at a restaurant supply warehouse store thus I can indulge a generous amount to bring all the random vegetable flavours together. Lovely creation Rik,looks delightful, and similar to the one Mexican cooks in the NYC restaurants make, main difference is they layer with corn tortillas, not pasta, the sauce would be about the same, maybe pinto beans.I have a tip for you, which you can try,or not,Mexicans when making most of their sauces, take a bunch of cilantro, with the stalks, tie with string, and throw into the sauce, then just cook it in there for a while, when the sauce is finished, they take out,and dispose of it,you can then add a bit of fresh cilantro if you want, they don’t.I think Central America does the same,as I can smell it from my neighbors, and that is where she is from, it has a smell all its own when cooked that way.I am in agreement with you on cooking bechamel sauce, never understood the putting of little bits of milk in at a time.I should add the cilantro trick to me makes the sauces taste Mexican, other wise they taste TexMex.😊

    • @dianeladico1769

You don't need no-cook pasta. Use regular lasagna noodles and either use a wetter sauce or add a little water around the edges before you bake it. You'll need to make sure the layers are inside the pan so they hydrate (No Rik Mountain style).
I've been using dry regular lasagna noodles for 35 years-it works.
Tip- If you want, you can pour boiling water over the noodles and let them soak a bit if you like. This helps if you need to cut them to fit to get nice straight edges rather than have them break all willy-nilly. But given it's a layered dish breaking is fine, too!
      Hope this helps.

Black beans are Cuban. Mexicans eat pinto beans or mayacobas (canary) beans for the most part. Black beans are available in Puerto Rico, but most of the natives think of black beans as tourist food. Otherwise, I think that this is great recipe which, I plan to cook using mayacoba beans. Thanks for your hard work.

So its basically a chilli mac n cheese with a little Bechamel with different shaped pasta? (which im a fan of by the way) So if i just made the chilli mac n cheese, banged a bit of bechamel on top before the cheese, it'll basically taste the same? Can't be arsed buying different shapes of pasta lol.

I'm not trolling you...just for trivia. I'm just as English as you, 4th generation removed, but in the US those are pronounced "hala-PAIN'-yo'. Just thought you'd find it interesting. It's not like some French words with 15 letters in them pronounced "Le" LOL. I always buy Mexican oregano as it is stronger, it might be hard to find for you folks overseas, get some if you can, and try it. It works in all applications no matter the food. This reminds me of tamale pie without the cornmeal. This looks fantastic, I'm going to try it, thanks Rik.
