Funny thing is many people think a knife that can rust is crap, but its actually a siqn that it might be high quality steel, and not some stainles alloy. Nice polish btw!

I wouldn't look at a rusty knife and think ''Hmm that steel rusts, might be good'' Doesn't really add up.. Many steels can rust, it can be crap, mediocre or average where there are some really good ones too.
''Some stainless alloy'' There are stainless steels/powder steels out there that are really really good. I'd say the biggest advantage to Carbon steel is the greater ease of sharpening, compared to steel with alloys in them such as Chromium and Tungsten being so hard. Although, there have been developed SS that are easier to sharpen.
Well ofc many steel types can rust, for example the common St37, but who the fuck would even think about making a knife out of such soft grainy steel. But say i pick up a rusty knife that i can barely bend with my hands, ill propably have a well hardened carbon steel knife in my hand, should i see patterns in the rust runing down the lenght i can guess 50/50 that it either is folded or had an artificial etch pattern.
Yes if you dwell into the world of very expensive knifes, or medical equipment, youll find SS types with very fine grain structures that can be hardened even beyond high quality carbon steel, thing is those are very expensive, and some are rather new formulars, so you propably wont find them laying in some second hand stores knife box or any other place you might pick up a rusty old knife...
