I have a mixed Slavic ancestry, which includes Polish. Dumplings are great. Those would be great with sour cream, green onions and even dill. It so reminds me of potato bread I used to make in Ireland and still do.the difference is I roll them out to about 1/4 “. Or so. Dino them in milk the nut them on a griddle for about a minute on each side.they’re lovely cooked with bacon. And thank you so much for another great way of using potatoes up.👍
These dumplings are called 'kopitka' in Polish. Translated that means 'little hooves'. But the rolls are a bit thinner than yours and are traditionalyl cut in 1 inch pieces, cut on an angle, hence the name, 'little hooves'. You add salt and pepper to the dough before rolling and cutting. These taste best the next day fried in butter. We eat them with roast , sweet and sour red cabbage and gravy.

These are like perogies without the skins. They could be dressed with sauteed onions and mushrooms in melted butter, maybe some sauteed bacon bits. Of course you should serve them with sour cream.
