This pancake is made without baking powder and contains all purpose flour, sugar, salt, evaporated milk, vanilla extract, eggs and oil. Ingredients
1 cup all purpose flour
1 cup milk
3 tablespoon sugar
2 medium eggs
1/4 tsp. salt
1/2 tsp. vanilla extract (optional)
DIRECTIONS
For the pancake batter, add the all-purpose flour, white sugar, salt in a large mixing bowl. Mix well using a wire whisk.
On the same bowl, add the milk and the vanilla extract. Mix until smooth and well-blended. Set the mixture aside.
Grab two eggs and separate the egg whites from the egg yolks. Place the egg yolks in the pancake batter and put the egg whites in a separate bowl.
Mix the egg yolks with the pancake batter.
Beat the egg whites using a hand mixer until you reach stiff peaks.
Gradually add the stiff egg whites into the pancake batter and fold gently. Mix until smooth and well-blended.
Heat a pan under low heat. Grease the pan with some oil or butter.
Pour some pancake batter into the pan gently to form a circle. Cook the pancake until bubbles form on the top. Flip the pancake to cook the other side.
Transfer the pancakes in a serving plate. Top with butter and enjoy with your favourite syrup.

My daughter found this recipe and asked me to help her. When I seen the sugar and milk go into the flour I thought it was strange, but when we separated the yolks and whites I knew we'd be folding in the merengue to the batter and thought that was cool. I didn't realize until then that she chose a no baking powder/soda recipe. They turned out awesome. My daughter said they were the best of all time and without any butter in the mix!

@Aljon, I did get the color but you have to make sure you don’t wait too long or else it could burnt. I put it on low heat.
