    Would it be ok to replace the chicken stock with a vege base stock for a vegan version? It looks delicious.

      Definitely. You can choose any veggie stock you prefer. I personally love to use a mushroom broth, or Better Than Bouillon Vegetable or Mushroom base. You can also use miso paste to make it vegan.
