Taiwanese Tomato Beef Noodle Soup 【台灣番茄牛肉麵】| Taiwanese Street Food

    Ingredients (配料):
    - 3-5 ripe tomatoes (3-5個熟番茄)
    - 1 onion (1個洋蔥)
    - 3-4 cloves of garlic (3-4個大蒜)
    - 3-4 stalks of spring onions (3-4根蔥)
    - Beef of your choice (I used eye fillet) (您選擇的牛肉(我用肉眼))
    - 2-3 bunches of coriander (2-3束香菜)
    - Tomato paste or canned crushed tomatoes (番茄醬或罐頭番茄蓉)
    - Soy sauce (醬油)
    - White pepper (白胡椒)
    - Potato starch (澱粉)
    - Noodles of your choice (您選擇的麵條)
    Method 方法:
    - Finely chop your onions and garlic and set aside
    切碎洋蔥和大蒜,放在一旁
    - Finely chop your spring onions but separate the front green part and end whiter part. You want to garnish your noodles with the front greener end and use the end white part to stir fry with onions and garlic
    將蔥切碎,但將前綠色部分和白色末端分開。將前端綠色部分用來點綴,然後將白色端部與洋蔥和大蒜一起炒
    - Rough chop the coriander and set aside to use as garnish at the end
    將香菜粗切碎,放在一邊作為點綴
    - Remove the skin of the tomatoes by making a cross at the top of each tomato and submerge in BOILING HOT WATER making sure no skin is exposed. Leave for around 10 minutes and you can peel off the skin
    在每個番茄的頂部做一個十字形去除番茄的皮膚,然後浸入沸騰的熱水中,確保沒有皮膚暴露。浸約10分鐘,即可剝落皮膚
    - Dice up the tomatoes and set aside
    將番茄切成丁,放在一旁
    - Finely slice the beef to your preference and marinate for around 15 minutes with white pepper, potato starch and soy sauce
    根據您的喜好將牛肉切成薄片,並用白胡椒粉,澱粉和醬油醃製15分鐘左右
    - Heat up a sauce pan and fry the onion, garlic and white part of the spring onions until caramalised
    加熱鍋,炸洋蔥,大蒜和蔥的白色部分,直到成焦糖色
    - Add in the chopped tomatoes and tomato paste/crushed tomatoes, stir well and simmer for around 15 minutes
    加入切碎的番茄和番茄醬/罐頭番茄蓉,攪拌均勻並煮約15分鐘
    - Add in more water if the sauce is too thick and flavour with a little bit of salt. Once you're happy with sauce, add in the beef and turn off the stove. Let the residual heat to cook the beef so it doesn't overcook.

    - Pour soup into cooked noodles and garnish with green spring onions and coriander
    將湯倒入煮熟的麵條中,並用蔥和香菜點綴
