Chicken🍗 Rice! Two Turkish Ways

  • Most popular dish with chicken: Chicken rice! I am going to show two ways in Turkish cuisine we make.➡️ www.turkishfoo... First Chicken Kapama "Tavuk Kapama" / Mişöriz - Mishoriz; and second one "Tavuklu Nohutlu Pilav" Chicken with Rice and Chickpeas.
    Ingredients For Chicken Kapama:
    1 whole chicken except breast part or about 8-10 pieces of drumstick
    2 tbsp butter
    1 onion
    4 tbsp olive oil
    2+1/2 cup long grain rice like Turkish Osmancık or Baldo or "Cal Rose"
    about tsp salt

    Maasha'Allah, yummy. I prefer cooking and eating the first version, except I also use cumin seeds and turmeric to flavour the rice while frying 👍

    We make a similar kind of chicken pulao(pilaf) in Pakistan . The only difference is frying the chicken with ginger garlic paste after boiling it and addition of whole aromatic spices like cinnamon sticks, cloves , cardamom , cumin seeds and pepper corns to it .

    My mom showed me that recipe for the same dish but I would put green peas and green peppers and corn my kids loved it and my friend come over to eat to u bring back alot of memories God bless you and your family's keep up the good work!! Don't be shy we like to see u smile on vedio!😁

    The first way is the way it is generaly prepared in Balkans, but what I find it interesting mishoriz is how we call it in Albanian Mish means meat and oriz means rice. Greetings from Kosovo

    You have so many great ideas. MashaAllah. I would try to make the second version. I really love using chicken stock “yakhnee” in rice dishes. But I will replace the chickpeas with green peas.

    Is there are reason for not cooking the chicken and rice in the same pot I.e. browning the chicken, removing, sauteing the onions and rice, adding the chicken back with enough water for the rice?

    I have already tried tavuklu nohutlu pilav. During the covid lockdown here over Christmas 2020, I got a chicken for dinner and used the leftovers to make it.

    Can risotto rice be used instead of long grain?

      No it can't be used, you can use only cal rose or basmati.

    I really like the chickpeas style, do you think that Baking the chicken in the oven instead of boiling it would be good as well?, I'm not a big fan of boiled chicken

      Yes you can bake the chicken pieces in the oven as how you do normally. Then use the meat over the rice, chickpeas

      I have another question for you if I may.... When I was a child my mother use to make a dish which was made with chickpeas & hamburger, and other ingredients, it was like a soup/ stew, I'd ask her but she passed away many years ago, Do you know what it might be?

    Assalamu alaikum from Dublin. My mouth is watering (I want to eat it now!) Both recipes look tasty and easy to make. The second recipe, the street food - I saw this in the Turkish TV series on Netflix called Intersection. I'm so happy that you put up the recipe alhamdulillah. My son is a fussy eater but I think he will enjoy this in shaa Allah

    I have eaten both recipes and both are tasty. Since you asked, I like the Tavuk Kapama more as I like the oven roasted skin on the chicken pieces. When I make it myself, when returning to the oven after removing the casserole pan's lid, I switch from the lower roasting element in the oven to the upper broiling element so that I get that really crispy browned skin effect. Good recipes and video, thank you.
