Good points. Very important to me is finding the right balance between the difficulty of putting stuff back, vs being able to quickly finding the part you want. Having TOO many categories is just as detrimental to your fun as having too few.
I agree that sorting into broader categories first and only later sorting into more specialized categories (or color) makes a lot of sense, that's what I also try to do with my Lego collection!

Honestly Organizing is going to be different for every person depending on the types of sets you get. You may end up with a ton of one piece type, but like 1-3 of others, so just devoting an entire slot to 3 pieces would be a waste. However, it also depends on the types of MOC Building you're into. For small parts, I would suggest looking into Jewelry/Bead Organizers though, just decide if you want Desk Organizers or Case Styles that can be stowed in a Cabinet for those small parts. Also don't be afraid to lookup some Cabinetry videos online, and build a cabinet yourself, since you might already have a builder's mindset...
My first sort was by general color, I quickly needed to separate the blacks from the dark and light grays... and I recently found another box of unsorted legos. I don't have enough bins! Great video!

I haven't got a huge amount of pieces, so I've got 16 tiny boxes which are sorted by colour for the small pieces, and anything larger than a 2x2 all gets put in 1 container
Great video. I also have bigger drawers, where I have ziplock bags with the different type of bricks. And then the gigantic bag with all the stuff I cannot decide where they should go.
