Simple Cheese and Onion Pie Recipe

  • This is a very simple recipe for a great supper - Cheese and Onion Pie!
    Ingredients
    500 g (2 lb) pastry (ready-made or see the section on Basic Techniques)
    400 g (14 oz) onions, sliced
    400 g (14 oz) cheese, grated
    2 eggs
    1 tsp mustard
    Salt
    Pepper
    Instructions
    Place the onions in a pan and just cover with water. Boil gently for 10 minutes and drain.
    Place the drained onions in a bowl. Add the mustard and season well with salt and pepper. Add in the cheese.
    Beat the eggs and add into the mixture, reserving a little of the egg for glazing the pie. Mix well.
    Line an 8" (20 cm) pie dish with half of the pastry, making sure the pastry just comes over the edge of the dish. Pour in the cheese & onion mixture.
    Roll out the remaining half of the pastry and place it on the top of the pie.
    Trim, and crimp the edges with a fork to create a seal. Make some slits in the pastry to let steam out. Brush the pie with the remaining beaten egg.
    Bake in the oven at 200°C for 30-35 minutes.
    Allow to cool for at least 20 minutes before serving.
    Titli's Tips
    Use whatever cheese you want, but it should be at least semi-hard. Don’t try this with brie, for example!
    The pie mixture is quite dry so there is no need to blind-bake the pastry beforehand. Goes well with a salad, or peas, or a nice crisp apple. There’s just something about cheese and apple…

    @TitliNihaan Made this for myself & friends this weekend. (Friends all died but I only lost a toe) .... NO, it really was delicious and was devoured. I've never even made a pie like this before but your recipe was so clear I thought I give it a go.

    I made this last weekend and it came out great, used a mixture of sharp cheddar, swiss, and parmesan cheese. The leftovers reheated very nicely in the oven too!

    @fishybishbash Sure, you can fry the onions if you wish, but just until they are translucent...

    @RujieKU Just a normal shortcrust pie pastry - filo or puff might work but it's better to use a regular pie pastry. See my video on making pastry if you're not sure.

    @agnesdeque La recette c'est deja pour une tarte de 20 cm... Pour une tarte de 10 cm (par example) if faut diviser les quantities par (20/10)^2 = 4

    I'm starting to try - try being the operative word - to recreate some of the pies my mum used to make. Your corned beef and potato pie worked a treat, thanks, so i'll give this a crack too. No blind baked pastry necessary for this one...?

    @Mikyajful I used Comte, which is like a cheddar. Any good flavoured hard or semi-hard cheese is fine.

    I have no kitchen skills at all but have made this many times and take it to work,they love it, its so simple,if i can make it anyone can, i also put potatoes in it, thanks xx

    @misterkiller89 Any good hard or semi-hard cheese will do. I wouldn't recommend using Brie :-)
    If you want to add ham, make sure you cook it before adding.

    Happy New Year Titlis.
    I made the cheese and onion pie and it is very good, although the next time I do it I will reduce the onions to 300 gms. I made the pastry using your basic pastry recipe but for the fat I used half baking margarine and half lard and it came out really short and crumbly - delicious

    Does anyone remember their mums making "cheese and onion"? back in the 80's. That's all she ever called it. It was just cheese and onion casserole but as far as I can remember there was no cream or milk, just this beautiful casserole. Big chunks of cheese and onion with its own juicy sauce and I can remember having it with chips. It was a treat meal. I'm dribbling thinking about it actually, it really was amazing. Sadly lost her many years ago and i never knew how to make it. I'd love so much to make it just as she did but honestly have no idea where to start.

    Hello Titli...For the last hour, I've been debating which pie I should try 1st; your corned beef & potato pie or the cheese and onion pie.....I looked at both recipes again and am confused about 1 thing....How do you decide when the pie base should be blind baked and when not??
    PS: love your food videos and your garden.... I am an avid gardener myself, but my experience is all with plants back home in India... still struggling with the seasons here in the UK :(

    You boil the onions. How about caramelising them with some oil? It does take longer, but wouldn't the flavour be more concentrated?

    Alternative recipe: if you're interested
    Homemade pastry; half fat the flour so:
    4oz plain flour and 2oz butter -
    Combine to make breadcrumbs and then add enough water to make a dry, doughy ball. Roll it out and line a pie dish, don't waste excess just roll it back on itself for a fat crust. Bake with ceramic peas for 15 minutes.
    Then chop one small onion and line the pastry case. On the layer 6oz of cheese (4oz mature cheddar and 2oz french hard cheese works well) then in a jug lightly w
