    INGREDIENTS
    1 Lemon Size Tamarind
    1/2 cup Toor Dal (Pigeon pea) 1 cup = 250 ml
    1.5 tsp Salt Adjust to your taste
    1 cup Pumpkin Chopped into cubes
    2 tsp Jaggery Grated
    2 tbsp Coriander Leaves chopped
    1/4 tsp Turmeric Powder
    FOR GRINDING
    1.5 tbsp Split Bengal Gram (Channa Dal / Kadalaparuppu)
    2 tbsp Coriander Seeds
    1/2 tsp Cumin Seeds
    8 Red Chili
    1/4 tsp Fenugreek Seeds
    FOR SEASONING
    1 tsp Mustard Seeds
    1 fistful Curry Leaves
    1/4 tsp Asafoetida (Asafetida / Hing)
    1 tsp Cooking Oil

    Sowmya, again one more excellent dishes. I will also do like this. But i use 1/2 moong dal and 1/2 tuvar dal. I mix all vegetables like carrots, beans, pumpkin including onion also with dal and make them to smash in cooker itself with two whistle and then only I will add tamarind juice and make it to boil just one minute.
    At last I add thadka with kadugu and curry leaves. Actually this method is little bit more easy.
    When you add dal with vegetables, at that time, you have to add sambhar podi and salt. Remember this.

    This recipe is amazing. I made it with white pumpkin. It tastes just like the Sambhar from hotels. 10/10 recommended.

    one small request.. can you elaborate under tips section when ingredients of a same dish slightly differ, why that ingredient is added and what taste it gives and how it enhances the taste of that recipe? for eg in this recipe you have added cumin 1/2 tsp. Some recipes don't have this ingredient and have black pepper and coconut. You have explained in comment section why you did not use coconut. How will be taste of sambhar with or without cumin and can more cumin be added?

      We can add tomato. If you are adding tomato, reduce the amount of tamarind a little bit 😊🙏🙏🙏

    Sowmya mam as usual excellent.but at the end if you fry little raw onion and jheera without oil and then grind and finally add the coarse paste into the sambar sowmya mam it would be very relishing.please try if you like. Mam

    If you add 2 to 3 spoons of coconut along with grinding items, it will be good. You can also split the dhal into half cup toor dhal & half cup moong dhal along with pumpkin. Hope you will like my suggestion

      Usually we add turmeric in regular sambar. Im not sure what do you mean by turmeric sambar. R u referring Kadamba sambar?

    I have tried this before without the cumin seeds..It was okay , not great when cold...This type of sambar should be had piping hot..That is how it is served in restaurants..I love sambar the authentic way..Cumin flavour sits well with rasam though not with sambar ..

      Cumin is the unique flavor in this sambar. If you don't like to add it with grinding ignredients, you can try adding it to the toor dal while pressure cooking. It really adds a nice flavor 🙏😊

      I would recommend to soak the dal overnight or atleast for 1 hour that would help to get mushy dal.
