      For Breakfast I made breakfast burritos with air fried sweet potato, spinach, peppers, onions, tofu scramble, and pea protein breakfast sausage crumbles topped with sriracha and wrapped in a mission whole wheat carb balance tortilla, lunch is homemade seitan slices on wheat bread with veggies and a piece of fruit (i have green apples and sumo citrus this week), dinner is my homemade vegan chicken pot pies, and snack is my vegan homemade protein cereal bar lol.

    B- grits with grilled veggies, avocado toast, overnight oats with berries
    L- salad mix with walnuts and berry vinaigrette, potato soup, roasted veggies over quinoa
    D- veggie spaghetti, ramen with tofu and broccoli, veggie budda bowls, and sweet potato hash
    S- celery with peanut butter, hummus with pita chip/carrots, popcorn and a dark chocolate candy bar

    Hey lady. One way I save money is by bringing, not buying my lunch. As long as I have food at home, I have lunch.
    I also do a grocery list with the prices and calculate as I shop. That way I won't go over my budget. Lol, I leave my kids at home, cause what they throw in the buggie isn't on my list. 😅

    girl make your own hummus! it’s soooo simple and and can save $$$! i started making my own this past week and I’m like damnnnn it’s just as good as the store if not better :)

    Baby Vegan here...week 3 and I am very excited for my journey! I meal prepped yesterday and I felt so accomplished lol
    B- Breakfast burritos...I used meatless sausage patties and ground them up, seared peppers and onions with JUST eggs, potato cubes and .vegan shredded cheese. I was able to make 9 of them and they were delicious!
    Lunch-Rice, broccoli, meatless chicken pieces and egg. I know, super simple but lunch and dinner have been difficult for me so sometimes less is more.
    Dinner- A traditional salad with all of the veggies. I eat heavier during the day and try to keep it light at night with minimal starches and carbs. Helps with my tummy!

    Thanks for the inspiration! I'm pescatarian but I incorporate vegan meals a lot. I'm always lacking on the proper amounts of protein throughout the day. This gave me inspiration to actually write out my meal ideas so I have no excuse to just something random lol

    Oh.. I’m making Chili with Tofu Crumbles .. Also broccoli potato soup! Put a falafel pita on the list for the future. I have a box of falafel mix from Trader Joe’s that I still haven’t tried!

    I shop like that! Try to think of meals with stuff I got. That eggroll in a bowl looked good & it's only a few ingredients! Love you & your videos. But I'm learning I need to just write down your recipes cause by the time I get to the store I forget half of it😂

      @@Shakaylafelice Don't forget frozen organic fruits and vegetables, and nuts. I pack in smaller quantities and freeze as I am the only plant based individual in my home.

    Great video. You were so good with sticking to your list!!
    I am new to whole foods plant based and really like eating the same stuff over and over, here's what I'm doing this week:
    B: overnight oats with flax and berries/banana (every day lol) I have some Bran cereal if I want to be crazy and switch things up. lol
    L: I made a big pot of veggie soup with some chick pea pasta and will be eating that until it's gone...and then I'll made another big pot of soup (it's cold).
    D: I'm trying to convince my husband to eat more veg so we are trying out: Vegan Bratwurst, Impossible Burgers, Vegan Mac n cheese, Vegan BBQ pulled "pork" sandwiches, and a Vegan Hamburger Helper (Lord, help me...I made the vegan mac n cheese last night and my kitchen was a disaster zone! lol but he liked it!!!) tonight I am baking some potatoes and putting some vegan chili on that and pouring some of the vegan cheese sauce I made since there's plenty left over....oh yeah, and ramen with tofu and veg.
