The best of these shrimp dumplings I ever had was a little hole in the wall shop my taxi driver took me to in strangely enough Hangzhou not Guangzhou or Hong Kong.
When you steam the buns, make sure you add enough water in the steamer. If the water dried out, you would get brown spots, like you are baking them instead. Cheers!
Is it possible to lay out a type of filling like jelly or a sprinkle of sugar or nuts before you roll up the mantou? Would fillings spill from the sides?
Is it possible to add flavorings like vanilla and chocolate to that kind of bread? And if it is possible would it be considered disrespectful to tradition?
Thanks for asking! Traditionally mantou is mostly plain. But nowadays, there are many different ways to make mantou, including chocolate, taro, pumpkin, vanilla, and etc. So please enjoy! 😊

You can still cook them until they are fully cooked, cool to room temperature, and then freeze them.

Do we need to wrap a towel under the lid ? Will all the water from the lid drop onto the man tao ?
You can definitely do that. For me, I didn't use any towels, and the mantou still came out pretty good.
