I have so much respect for Iranian food and people. Some of the most interesting people I have met in my life and some of the best food I have had in my life have been Iranian. Salam and cheers to you all.
Thank you for the loveliest video! It was interesting to hear about the history behind the dish, and you also have a very nice way of talking through the cooking process. I am half iranian and will make abgoosht for my partner for the first time tomorrow, and I will definitely be following your recipe!
Its nice, abgusht is a classic, thanks for the recipe. We have an earthenware pot, think its 3 litres, and for the past week I was thinking to cook some slow cooked lamb. I will make Abgusht!🐞
Great video :) I'm an American who has grown up using metal pots and pans to cook, but I'd really like to try using earthenware pots. They seem vastly superior for stews, curries, etc.
I'll be there at 5:45. : ) another great video. Which cut of lamb do you recommend? Do you think overnight in the oven is ok? I have an induction cooktop so can't do it on the stove. Thank you!

Yes, as long as it doesn’t dry out.
Can chickpeas/chana be substituted for the garbonzo?
Yes, it will taste different but ok still
Thanks for the video! For reference, the original abgoosht/dizi doesn't have tomatoes and potatoes as they come from the Americas.
🙌🏼
Do you add cold water or hot water
Add cold milk instead.
I added room temp here
