And from artisinal shops its tastes very natural, which i still like but less. Do you have any idea what they use to make pistachios taste fake and delicious? It's the first recipe i see that uses almond extract, is that it? or can it be something else?
Hey there, I think they just use synthetic pistachio extract which would bring that « fake » taste. If you use this pistachio paste, your ice cream will taste like the artisanal ones, more subtle and natural. You should try the extracts then! 😉

@@CALLMEMONDAY_ Actually soon after that comment tried to make it and I read on some places that commercially they use almond extract and that is what gives it the taste. And that some ''pistachio'' ice creams are actually just a mix of vanilla and almond extract, no pistachios in there. So I didnt have any almond extract but I did have Amaretto liquor so I added that alongside pistachio paste and OH MY GOD, it was....so good. Now I know it's the almond extract that gives it that singular flavor.
I think that the recipe it's referred to the french recipe, in italy we don't add almond to pistacio, when they add it they always don't write it, they use it only because the pistacio is expensive, i hate the mix 😪

you dont even have to use almond or almond extract. You can skip both steps and you will have the same product just with less almond flavor.
