      I understand that it's simply not logistically possible to use pestle and mortar in professional kitchens... But don't you think the major disadvantage of blender/grinders is that they 'heat up' the ingredients and reduce the flavours greatly.
      I particularly feel this while prepping the spice mix for Chicken Cafreal (a Goan dish). There's virtually no freshness & moisture left from the Coriander leaves afterwards, which is a key ingredient for the dish's flavour profile.

      @@mjb7015: Yes it is. Especially, if you end up smashing (double chopping, sideways) things like coriander, basil, spring onions etc... they are easy to ruin, TBH.
      P.S. However, when I cook Indian (especially ‘Bengali’ dishes like fish/chicken/chevon curry), I personally prefer adding the chopped corianders a couple of minutes ‘before’ turning off the heat, and fold them in… to help infuse the full flavour. It works better than having a mouthfeel of ‘raw’ coriander leaves (and therefore ending up feeling like a Chevon myself… in my personal opinion).

    East Asia(China, Japan, Korea)
    - Soy sauce for salt flavor
    - Rice vinegar for sour flavor
    - Dark soy sauce or Mirin for sweet flavor
    - Sesame oil for oily flavor
    - Wazabi, Gochugaru and Mala for spicy flavor
    South East Asia(Thailand, Malaysia, Indonesia, etc.)
    - Fish sauce or Shimp paste or Fermented fish for salt flavor
    - Tamarind paste and Lime for sour flavor
    - Palm sugar for sweet flavor
    - Coconut milk for oily flavor
    - Bird's Eye Chili, Goat Pepper, Chili Pepper for spicy flavor
    That's why Uncle Roger was upset when he saw Jamie use wrong ingredient. He use east asia ingredient for south east asia recipe.

      Very good basic summary... and this from a white guy who has been deep diving into asian foods via the internet for the last couple of years.
      Still tons to learn, but surprised Jamie doesn't seem to have learned this. I certainly am not special and no training either.

      @ArariaKAgelessTraveller Racism is a factor, but much more it is just a lack of information.
      Decades ago I would have assumed that things were much more homogenous in Asia in terms of art, food, music, etc. I have learned much since and stand very much corrected.
      Nothing racist in my early thinking, I just honestly thought from the little I knew, that the Asian cultures were very similar to one another.

      We also have sweet version of soy sauce that's thicker in Indonesia.
      Savoury flavor can also use terasi/belacan- basically our version of katsuobushi I guess~

      The problem is Jamie doesn't explain in these videos that what he's making is a non-traditional way, why he's making it this way, and what a traditional way is. In some of these videos it feels like Jamie just threw together a recipe and didn't even practice it or try it out before turning on the camera hence why in videos like the Thai green curry, the Pad Thai, and a few others he takes one bite and then pushes everything around on the plate for the rest of the video even though he proclaims it great.

    Tomato garlic and parsley are the iconic Italian ingredients....they are so iconic of italy that you can literally recreate their flag with these ingredients.

      @@KappaDaKappa basil is also used in some Thai cooking...and even cool beverages. so it's not exclusive.... parsley is more specific to Italian and other Mediterranean cuisine. Mozzarella is pretty iconic Italian....but it's not as universally used. There's a lot of Italian dishes with no cheese....but, you find me 3 without garlic in them at all?

    I really loved this collab! I also love how chef James is always very honest with his opinions. He doesn't "over-react" just for content. He genuinely looks at everything from all sides and I have always appreciated that his reactions and commentary are not an insult to those of us with moderate intelligence levels. Vincenzo as well. I would love to see these 2 chefs review more videos. You guys should review a Mythical Kitchen video Chef Josh is the most insane and fun chef on youtube!

    In Thailand we don't make our paste creamy, we use pestle and mortar and "smash" and "crush" it. Our mortar has a deep hole and use pestle to crush in a straight line instead of circular motion to "grind" it. If you taste Thai paste you can get lemon grass fiber between your teeth. This is why blender don't work in Thai cuisine even in restaurant, on the other hand Thai paste can be store for quite a while (Thai paste have less moisture, more salt) in a refrigerator. In restaurant we buy it or make it a day before instead.
    In a factory we use food grinder instead of blender. that why it didn't taste as good but still better than using blender.

      Could you imagine them all sitting on a set of couches, beer or wine in hand, commenting on the latest Jamie Oliver disaster, with bowls of popcorn, finger food, snacks etc, and they have to keep an individual tally of how many mistakes Jamie makes, then see who got all of his fuckups?!

    I love this collab, albeit I didn’t agree with the subject matter being Asian cuisine for the first video. I was thinking maybe doing Spanish or Italian cuisine for being subject matter experts… maybe even doing a fusion of some kind? Lol I’m opening Pandora’s box with that one but great videos

    16:23 my mum taught me to blend large quantities of ginger and garlic in the blender. And the first thing she taught me was to never put all the large quantities ginger and the garlic together as it's too much for the blender. She first blends the ginger which reduce its volume by half and then slowly add the garlic little by little until it blends up nicely without stalling the blender. And she always hammers me to put in a generous amount of salt cause it would help the paste blend better as it draws out water.
    I think salt would be an option to save that abominable paste. In exchange, just reduce the amount of salt when you are cooking that paste. Definitely not olive oil and soy sauce!

    I love a food creator collab. If it weren’t for the fact that both of you guys reacted to that veggie lasagna video I feel like that would have been the perfect video for you guys to collab on but yeah but Jamie doing his version of Asian cuisine is always a must see (then a must not punch my screen because my Thai ancestors would be like the ghosts in mulan)

      Also ironically my mother just made me a thai red curry with shrimp earlier this week and yeah she’s made it with massaman curry paste and it was perfect. I still have leftovers and I might eat them up now to feel better about myself

    I like how even in the rare moments they defend Jamie, in using the garlic crusher to bring out the aroma and flavors in the garlic, Jamie still managed to eff it up by unnecessarily using it cuz it's just going into the blender anyway lmao

    9:10 yes! that is a great advice to make a good pesto and avoid the oxidation of the basil. Another method is to boil for few seconds (4/5) the basil, then put it in a bowl with cold water and ice, let the basil rest then take all the ingredients in a blender and make the regular pesto recipe. No more dark pesto again

    I very much enjoyed your first video collaboration and wish you both that it is the beginning of a synergy that benefits you both. What I particularly liked is that your video allowed you both to shine. Vincenzo - in my eyes you contributed an elegant, humorous seriousness; you showed your genuine interest in understanding the criticisms without blindly jumping on the general bandwagon of disregard of Jamie Oliver's presentation.
    James - you were able to let your knowledge and the fruits of your experience shine and tried to give substance to your criticism by answering Vincenzo's interested questions knowledgeably and accurately - always of course with your mischievous smile, which gives the presentation of your knowledge even more power and yet lightness.
    Another positive for me was the fact that although you chose Uncle Roger as the starting point for your video, you didn't give him too much space other than a few laughs.
    That was very refreshing for me. Not reacting didn't diminish his comedic talent, but it did put it into perspective.
    I really hope that you two continue to work together and please don't lose that wonderful balance between smiling, curious seriousness and excellent knowledge of everything that falls into the broader area of ​​"cooking" - presented with a smirk.
    Two thumbs up and please keep it up. I'm a fan.
