Yes I've been to 3 of your visited restaurants, 1) in Ampang, 2) at Pudu ulu and 3)in PJ. Done so many years ago, at least 30 years ago at Ampang., next well be at Jurga hills close to Morib for beggar chicken, duck pork and rice!!
Why Hong Kong and Malaysia using different parts of pork for Char Siu, it is because old time we do not have refrigerator, therefore old timer cook marinate the leftover meat, usually lean meat and to preserve it. Hong Kong cheft still maintain the traditional so those low wages earner still can enjoy the char siu. Imagine if now Hong Kong char siu changed to use pork belly, the price is going to increase a lot. Malaysian people are lucky to have pork belly as char siu. Malaysia
You should try Brother Kuan in Bandar Puteri Puchong. One of the best Char siew I have ever eaten. They also have one of the best roast duck. Siong Thong siew Ngap... best !
Surprised you could find the one along jln Ampang. It isn't well known as most would not had venture there. The last one was a well hidden haunt . I've eaten there and would consider Soo Kee as one of the most consistent one around . Tried their chat siew as far back in the 80's and the last time was just prior to MCO.
To me...is 1. Char siew Yong 2. Sun Meng Kee @ connaught 3. soo kee Meng kee used to be good but now quality not sure why inconsistent, maybe they let myanmar cook to bbq the char siew....and there are many copycat shop around the main shop..
Should check it out Restoren BBQ Kong Meng at No 11 Jalan Lorong Bunga Melati 2a, Taman Maju Jaya. Near to Shamelin and Pudu Ulu Char Siew Yong.. Their Char Siew and Roast Duck Ichiban

Some prefer to have lean Char Siew because it is healthier. Lean Char Siew's meat is tougher. Try to minimise intake of fat for health reasons.☺ I normally order lean meat, health over taste.

幾年前去過幾間香港著名的叉燒 ,覺得跟馬來西亞叉燒很不同,給人偏好大馬叉燒真的好吃很多。 香港的都沒燒焦皮,肉太多,太大片吃起來干粗粗。

香港叉烧其实是跟广东叉烧一样的,都是用眉头肉烧,而且不能少焦,会被顾客骂的,马来西亚叉烧确实比广东的好吃太多了,所以现在很多广东新派的茶餐厅会卖马来西亚的叉烧叫马来黑叉烧
在香港住过近几年, 香港义烧基本上切得比较大片, 也挺不错的, 大部分瘦肉多。 配上港式特别的蒜蓉泥酱, 很美味。谨记得在尖沙咀有间卖的晓味好好吃!

蘇記的叉燒瘦肉部分確實比較硬,沒有做到鬆化或 tender。
贊同蘇記>叉燒楊。最重要是蘇記的没有添加梳打粉。但是以前已退休蘇記老闆親自燒叉燒更加一流,美味及性價比高,有麦芽糖香。30年前第一次吃了,真的忘不了。

个人推荐 Damansara Uptown The Starling Mall The Museum 的“拖地叉烧”。顾名思义“拖地叉烧”也就是用拖地猪腩肉来做的叉烧,入口即化!
講真!香港嘅叉燒同馬來西亞的邊有得比,講用心都輸晒啦,大馬嘅軟到入口即化,外脆(窿皮)內軟,應該花咗唔少時間燒。香港嘅太硬。。。

Ampang 個間要一早訂左先,次次去D叉燒都係賣晒。雖然佢地D其他嘅菜都煮得好好吃,但係如果嗰度吃一餐少左叉燒就覺得好可惜咯。有帶過外國人去吃,包括香港人,大家都覺得好吃。

駛鬼去咁遠,Starling Mall鬼式拖地叉燒都同以上4間店差唔多,呢度唔會有人用梅頭肉做叉燒架,更加唔會落玫瑰露

海外天饭店jalan imbi,比明记,新明记,叉烧杨高个level。大块外脆内软,只是稍微有点甜。吃了十多年叉烧还是海外天,价钱也是最高毕竟饭店,但要订。

北马的叉烧是红皮,无蜜汁,不黑不焦边,至于是软是硬要看店家,和雪隆完全不一样,以至于在北马待了好几年都不肯承认那是叉烧XD 不难吃也不好吃,但可能那时没钱没车吃不到好店吧。
以前同善路有一间好好好吃的叉烧👍佢既叉烧头🤤🤤🤤几年前去老板以经冇做咗😓有边個知道有冇传人, 化者搬去边鼠可以话我知。。多谢
