I first saw your video when I was in Koh Samui and thought I would try my hand at making the Moo Hong when I got home (UK). However I did think it was lacking in ingredients so besides following the recipe as instructed I added the following ingredients: Diced onion, root ginger & garlic and I changed out the water for pork stock. The result was most satisfying served with vegetable fried rice.
I was lucky to find a cooking school in Chiang Mai like Yings. It was the Sompet Thai cookery school run by Boonsarong and her husband. Like Yings we were at their home where she had her own garden so no need to spend any time going to the market. We made the curry paste from scratch, pounding until Boonsarong was satisfied, make lunch, chill out on the porch overlooking the river then back to work for dinner. Did two wonderful days there and she really made sure we tasted all ingredients we used and stressed balance all the time. Fond memories, thanks for the wonderful video!

This is a real thing, khun Ying is a very good (southern Thai) cooking instructor and she also spoke good English and Thai (with ตัวกล้ำ " ร " and " ล " very well). I wish I can try the curry dish (gang som rom ?), it looks delicious and healthy !.

Love your posts mate, it's great to see a farang who knows about Thai food, I lived in Thailand for about 11 years and you'd be surprised that most farangs that live there don't really know much about proper Thai food.... Hats off to you though as you don't even have Thai family, as that's really where I learnt more. Btw this post is gold.

Loved the pork dish but was surprised how fatty it was, no wonder that you needed to add some lean shoulder. We did a cooking school which was out the back of Chaweng 5 years ago but this looks a lot better as you can collect some of the ingredients from the garden. Also liked how you cooked over coals instead of a gas cooker.
I did. Probably the most enjoyable of all your videos to date for me. I felt it in my bones. Ying reminded me of several of the people I was privileged to meet when I was in Thailand, so different from what I was used to in the US back in those days, and who made me fall in love with the people and the culture.......and the food.@@theroamingcook

You need to head a bit north from there to Petchburi, the land of sugar palm. The cusine will turn to central Thai with much more seasonal ingredients since the south is more or less raining all year.
So interesting and informative, I actually got hungry watching. I've been trying to find out the name of that shrub and finally explained by Ying, 'climbing wattle', love the taste of this and the health benefits are quite huge. Great viewing hope you can do more , thank you, safe travels and cheers.
