The first one is a Fender Stratocaster (single coil pickups), the second one is a Fender Telecaster (tele single coil pickups) and the last one is an Epiphone Les Paul (humbucker pickups). All of them were upgraded with @coilsboutiquepickups

The sound comes from your guitar, amp and fingers. The audio interface is the recording instrument. About recording without one, never tried tbh.. I will point out that there are a lot of great, simple and cheap audio interfaces (I think around 300$ and you’re good)
I liked the strat neck and the tele bridge the most
Sorry as a lay person I don’t know difference between any of these guitars. Would’ve nice to put labels but I like tone of middle one the best
