Learning to master motor skills on your non-dominant hand is kind of like trying to get stronger. If you go to the gym and work out for 5 hours, you won't see any muscle when you get home. It takes consistent work and effort to start to see progress.

I am a leftie but can write with right. I usually use right for everything else thats social. Considering people in my country wont shake with left. Oddly i have two different handwriting one for each hand.
Writing with both hands doesn't make you fully ambidextrous. You have to throw a ball with both hands, eat holding a spoon or fork with both hands, kick a ball with both feet etc. Although there are things I could do with both hands, consider myself as cross-dominant.
i trained myself to be fully ambidextrous in one month (including writing, table tennis, drawing, throwing, eating, brushing, cutting, mopping with my left hand)
Some years ago I tried writing with left hand, I regularly practiced for some weeks. I was writing and the difference clearly looked between my first time writing with left hand and after practice. I stopped practicing and after some years( *now* ) when I try to write, I feel comfortable while writing with a good handwriting. If I practiced more, I can do it faster
