The “tap on the bench” method works great for me and gives me flatter cookies every time. Right as you take the cookies out of the oven, tap the tray on the bench a couple times and it gets rid of the air inside and flattens them out. They’ll continue to flatten as they cool.

OMG, a triple thank you! I thought I was going go have to go to a conversion website for US measurements. So glad we don't have the metric system here, although I do sometimes bake by weight.

One of the best recipes I tried them I just needed to add some more flour and my butter was salted so I didn’t add more salt but turn out perfect 💗💗 thank you for sharing this recipe

I just made this and it was a decent recipe. The cookies stuck to the pan which normally is never a problem with me so when taking them off the pan they crumbled a bit, even though I let them sit for 30 minutes. I dont think 8 minutes is long enough, I left mine in for 10 and they were still undercooked in the middle. I'll try the recipe another day to see if I can do it like you did
The whole point of these cookies is that they stay soft in the middle. They’re imitation subway cookies which are chewy and gooey in the middle. If you want hard biscuits you’re on the wrong recipe!
i just made it n turned out as the picture n texture was so good, a bit crispy the edge n overall so chewy but a bit too sweet so i'll try with less sugar next time🙌

I was so excited about this recipe but it didn't work :( I don't know what I did wrong. They became extremely flat while cooling down (the chocolate chips were popping out) and they were way too sweet. I tried to perfectly follow the recipe. But I didn't have white sugar so I put 150g of brown sugar and 115g of light brown sugar. And I only had 100g of plain flour so I added 40g of gluten-free bread flour and 40g of maïzena cornstarch. Also I wasn't too sure about "1/2 tsp Bicarbonate of soda" but I don't think my measurement was that off. I just read that recipes that contains bicarbonate of soda need to be baked right away. But like the recipe said I put it in the fridge 30min (I eventually put it in the freezer 15min more because I needed it to be firmer). Obviously for you it worked out great. I'm just trying to figure out what were my mistakes.
The same thing happened with mine, I’m going to try this recipe again but with a little bit of baking powder. Baking soda expands and baking powder rises.
Your problem was leaving out the white sugar. You HAVE to put some white sugar into the mix, you can’t use completely brown sugar. Brown sugar causes spreading so if your dough only contains brown sugar they will spread uncontrollably and become way too flat. I’m not trying to come for you but you changed an awful lot about the recipe so don’t be surprised when it comes out “wrong”. If you really can’t get white sugar, I believe that chilling your dough for longer *may* stop the spreading to a degree. But yeah the lack of any white sugar is why your cookies are flat. I’m sure they still tasted lovely though, and we’ll done for having a go!! 💗
Love this recipe! I tried it yesterday and really recommand to try this out. I just found my cookies a little bit too thin. I don't know why they came out like this. I found them also a little bit too sweet and want to reduce the sugar next time.

To 180 degrees C (or 160 degrees C for a fan oven). Preheating just means you put the oven on prior to when you bake to allow it to reach the temperature you want it to be. If you switched the oven on and then immediately put your goods in the oven they would come out under baked because the oven will not be hot enough yet. It will depend on your oven how long in advance you need to preheat. Hope that makes sense!
Can someone explain to me why when I whisk the butter and sugars my mixture is really liquid, rather than a paste like in the video. I used clover butter instead of butter so I am assuming thats why but can someone confirm?
That’s exactly why. I tried it with Clover first and had the same result. It went more paste-ish like Eloise’s when I used actual butter. It doesn’t make a huge difference to the end result but I found my cookies were a little thinner and had a little less substance to them when I used the clover.
I didn't hace vanilla so I didn't put it, and I didn't have the egg, so I replaced it with 1/4 cup of yogurt, and I didn't have brown sugar, so I put in molasses and white sugar, but still, OH MY WORD! Where do you get such recipes from, Eloise?! I am still MIND-BLOWN!!!
I made this just now and yes it’s approved 👌 I have no chance to rest the cookie dough for 30 mins because I was craving really bad so I cooked it right away, and guess what ? They turned out good soft and chewy and I love the part that there’s a cracked on my cookies. I bake @ 350 preheated oven for 10 mins. Thank you for this recipe. And now I’m your subscriber.

if you want flatter cookies, you may need to use more granulated sugar as that is what keeps them flat i heard.
@@musicman2675 other way around. I’ve found that the more brown sugar I used the flatter they went because they spread out more.

I made these and they were super chewy! But it was too sweet for me so I recommend to put less sugar

Not enough flour always measure out your flour you can put to much or not enough of flour not correct measurement😊

No, you need the brown sugar. The taste and texture will be completely different if you just use normal sugar.

Mine was exact same runny wise ‘& I used reg butter.
