With Conqueror's Haki it's not about 'knowing' that your will is superior, it's just that your will IS superior. Some exceedingly rare individuals just have greater willpower and because of that they're able to use Haki in a way that normal people just can't. The most basic form of this is simply being able to overpower another being's will with raw presence allowing a user to render weaker people around them unconscious basically with a thought.

Your will can just BE stronger than someone else's. If you and someone else are both arachnophobic and both of you are put in a room filled with spiders, and one leaves before the other, then the other has a stronger will. That's not a very hard concept to grasp.

Also, Whitebeard not absolutely cutting loose with haki in the marineford arc is a pretty glaring plothole as well. Maybe his medical issues prevented him from using his full power or something. I don’t really care. Haki is awesome and I love its addition to the story!

It's not their ambition that gives them the Haki, it's the other way around. Whatever it is, that lofty ambition (yes, even being the best cook on the planet) can drive them into high stress, high stakes situations. Once their strong enough from those trials, they are able to start using that conqueror's haki. But it's really just some Chosen One nonsense that Oda will tie into the void century, Will of D., etc. to explain whatever he feels like explaining before this trip is over.
Haki and ambition are the same thing. Even observation and armament are ambition. When someone's ambition is strong enough, it manifests in the world as haki. Conqueror's haki is the ultimate form of ones ambition. Literally the desire to conquer, to be king, to be the best in something. No you can't give armament haki to another person, only objects like weapons can be imbued with armament haki. Conqueror's haki is rare, everyone is ambitious but not everyone is willing to throw their life and futures away for ideas and dreams. When or if you watch One Piece you will understand when you hear about certain pirates who realize the difference.

Observation Haki is kinda different with Byakugan and Sharingan since both of them you need eyes, the closer counterpart maybe sennin mode sensing.
If you played any of the Arkham games, Base Observation Haki is more like the Detective Vision, as well as the cues from mooks about to attack.
