Put some oil on the horn too, so the casing can slip out easier.

You mentioned the LEM meat grinders... I have a #8 electric (plastic case) model. Just used it my first time and it did a great job of grinding, but not so good a job of sausage stuffing. Although, it's likely that I just need more practice. I can fault it for the plastic stuffing tube that is conical, instead of straight, which prevented me from loading casing onto half the tube. Other than that, I may have let the meat get too warm (even though it was quite cold to the touch), as it took on a very fine texture and was sticking in the 2-inch-wide meat loading tube and had to be plunged down---a lot. I did end up with much air, which I dealt with by letting it out the open end of the casing, after turning off the machine. I also made the mistake of trying to twist the sausages as they came off the end, which I found out is not ideal.
I'm glad you made this video and wish I had watched it before stuffing, as I may have ended up doing it differently and likely would have had a much easier time.
P.S. Just watched someone else with a Cabela's grinder/stuffer and it also had a conical plastic output, but it also had a straight metal tube that sticks out of it for the casings. My LEM has no straight tube, yet the manual shows what appears to be a straight plastic tube. I wonder what's going on with that. I'm going to see about getting a different stuffer attachment, since using only 3 inches of compressed casings doesn't go very far.

Hi Aaron, I had nothing but problems with my Kitchen Aid grinder/stuffer. It grinds really well but stuffing was the cone shape, sucked. This one is so easy to use and clean. Heck, I should use it more often.
Thanks for the comment, I hope your sausage came out delicious.

Meat grinders are not ideal for stuffing because of the air created while grinding. A separate stuffer is better

So sorry I cut that out just before we put it in there but just where we were putting it in and took it out to put the sausage in it, it just slides in to place they way we started to put it in. there's no locking it in it cradles into place and stays very secure. The whole system is a super easy clean up!

@@OldCountryCooks you are welcome. My brother owned both kitchen aid grinder and stuffer, I used his. while the grinder was good the stuffing took too long and created air pocket s so I figured I would invest in this.. hopefully I like it

Thank God it's only a review of a sausage stuffer. The stuffer is still serving us well, after all these years LEM hasn't let us down. My technique may be flawed but my equipment is not.
Thank you for visiting. I do wish you could have let me know what the mistakes are since you took the time to say they exist. Are mistakes related to the device or the sausage making?

hi , i am wondering why you rubbed your nose with gloved hand and then into the sausage??? also do get yourselves the lem grinder and a foot switch i make mine, it works so much better than the kitchen aid. I did that also for a while. thanks

    • @OldCountryCooks

Thank you George! No foot pedal here. I wish! lol Have a great week my friend!

@@OldCountryCooks I understand not having a foot pedal, but still one should not rub nose and then dig in. just my 2 cents worth. I do yhave a question if one is putting sausage into pound tubes world you recommend the five or 15 pound machine? it seems to me a 5 lb one you would be changing lots to ad meat. thank you and lem grinders are great!!!!

@@OldCountryCooks watch like on ebay and find a footswitch then just wire it in. I think my total cost on foot switch was maybe 20-25. and it is a great thing to have as if you stop meat it shuts down grinder and keep the grinding head cool. thanks
