Lawson's Caramel Basque Cheesecake Copycat Recipe

    Basque Cheesecake is a trendy cheesecake that breaks all the rules! Although it originates from Spain, it's made its way worldwide and can now be found in various flavours in cafes and convenience stores across Japan. This delicious caramel basque-style cheesecake is inspired by Lawson's popular "Baschee." It's smooth, creamy, and one of my favourite cheesecake recipes!
    INGREDIENTS:
    Caramel sauce
    25 g white sugar - caster or granulated
    30 ml water
    Baschee
    3 slices processed cheese
    30 ml whole milk
    100 g cream cheese - I use Philadelphia or Yukijirushi
    2 tsp unsalted butter
    50 g white sugar - caster or granulated
    1 tbsp honey
    1 egg white
    2 pasteurized egg yolk
    1 tbsp cake flour
    1 pinch salt
    200 ml heavy cream

    what brand of processed cheese do you use? could you describe the taste of the cheese, is there any tangy taste? where I live there are quite a few brands of processed cheese, there's the cheapest kind and then there is a premium kind which people say tastes better and has a mild tanginess, I have never tried the premium kind however.

      Hi, I can't remember what brand I used specifically, I didn't use the cheapest one but also didn't use a premium kind. Probably somewhere in the middle. The cheese is melted and mixed with milk so it's okay if it's a little tangy because the milk mellows it out. I recommend sticking with a brand you know and like, hope this helps!     Can i make this without honey? What does honey do to this cheesecake? I want to bake this rn but have no honey at home.

      Honey just adds another element of sweetness and flavour that compliments the cheese, but it's okay not to use it. Honey is sweeter than sugar so you'd need to replace it with a little more sugar, maybe 1 tbsp + 1 tsp of sugar? Hope you enjoy the recipe!

    What is the importance of proceed cheese in this recipe

      It adds more of a cheesy taste (whereas cream cheese alone is quite mild) and also improves the texture. I tested with and without when I was creating the recipe and preferred the one with processed cheese. It is optional though, I've included measurements for cream cheese only on my blog.     Do you have to use processed cheese

      I use processed cheese melted with milk to improve the taste and texture, but you can still make this recipe without it by replacing them with an extra 100g of cream cheese. It will be less cheesy and more creamy. Thanks for your question!
