    My 1982 Kerr canning book has a recipe for Spanish Rice. 4 cups rice, 1 cup green pepper (chopped), 2 cups onions (chopped), 8 teaspoons salt, 6 tablespoons chili powder, 8 cups canned tomatoes, 2 cloves garlic, 8 cups boiling water. Add rice to boiling water. After water returns to boil cook 5 minutes. Add remaining ingredients. Mix well and let mixture come to a boil. Pack into jars to within 2 inches of top of jar and fill with additional hot water to within 1/2 inch of top of jar. Put on cap. Screw band firmly tight. Yield 6 pints. Process 60 minutes pints or quarts, 10 pounds pressure (adjust for elevation). So obviously rice is okay. The recipes in their 1982 book were tested, for those who worry about alphabet agency approval.

    I AM AN OUTSIDE THE BOX CANNER LMBO 😅😂❤❤❤…I was told not to CAN Butter 🧈, pumpkin 🎃 and ham. I’ve done alll. Never an issue. Just used my last canned quart of ham from 2014….

    You know, I’ve thought about this in the past and wondered how it’s OK for Campbells Soup to can chicken and rice soup, but not OK for us? Wahooo! I love this video, thank-you! Any reason why we couldn’t also add a little butter, salt and pepper? 🥰

    I can chicken and noodle soup, using udon noodles works best, they hold up better in my opinion. I make my soup, put in the jars then add the UNCOOKED noodles, pressure can.

    I've never considered canning rice. I've seen wild rice canned in the store before. I've thought about cooking then dehydrating rice, that way it's a matter of adding (hot) water. Interesting

    I canned white rice years ago didn’t care for it at all it was mushy but it’s still food and on my shelves.

    This is why I can loads of beans. I don’t want to not have water or waste lots of water trying to soak beans. I can them plain, put into soups and stews! I also can 🥓 bacon strips and bits and pieces. I reuse my pickle jars to water bath can pickled onions, pickles, etc…they seal great. I water bath can heavy cream. Like you, I want a large variety of ready made meals. ❤

    Fast forwarding is an idea for videos on the filling jars or prepping veggies. More thoughtful for us. But a good video and good idea.

    its dangerous to can outside the box, there is a reason there is a box. YES, you can, can anything, but the question is, SHOULD you??? this is playing Russian roulette with safety. Rice may seem simple but even rice has sare food handling.

      I do, never have lost a seal. I reuse the same lid as long as the rubber inside is still good, up to 4 times.

      @@carolhinman8431I do the same but never on meat as I don’t want to take the chance but beans, broths, veggies not a big loss if the seal gets compromised.

      I use them to water bath can pickles and pickled onions, etc… they seal great. I’ve never tried to pressure can with them.

    Why was there so much water in the jar of water-bathed rice, does it get absorbed? Seems to me cooking for 30 minutes the water should get absorbed unless it siphoned some into the jar. Do they all look like that, I'd like to see more of what you did and more than 1 jar in your hand of each.

    I noticed that when you took the white rice out there was a lot of water on top of the rice in the jar. Does it not come out like regular rice when you cook it? Also is it all sticky together or flaky like rice does when you cook it in a pot?

      I tried this. I think I got a false seal because of the starch. The smell and taste were horrid. However I made burrito in a jar with rice and it was amazing. Gonna try again with less rice.

    I would love to see the final product outside of the jar. It looks like a lot of water in the jar. Do you pour off the water and then heat up the rice? Love this good idea.

      The rice is uncooked going into the jar. It will cook and asorb the water

      I canned rice recently and followed this recipe for 1 cup rice and fill the rest with water as she did and water bath canned it for 30 minutes. It came out mushy and there was still a bit of water in the jar surrounding the rice. I will use this rice for a kasha type of meal where I add milk into it and have it for breakfast with some honey or what not.
      Because of how the texture was I ended up doing another batch of rice adding 1 1/4 cup rice and filling it up with water in a quart jar. Water bath canned it for 30 minutes. This time the rice was still mushy but not as mushy as using just 1 cup of rice.
      I’m gunna experiment with it a little more until I get the best texture and best result so it be done properly. My idea is to do 1 1/4 cup rice again but this time not filling it up with water as mush as she did but slightly less. I did add salt into my rice. I don’t see why I can’t add butter or a little bit of oil into the jar if I wanted to. But haven’t tested it yet. Should’nt be a problem I don’t think. I’ve water bath canned meat- pork and beef many times and canned it for 4 hours in a medium boil quart size jars and they last over a year and a half. Tastes Perfect on top of rice or as a side and its so juicy. You can add your own spices, bay leaf, no water to the jar because the meat releases liquids because of the salt in the jar with it. And you can pack up the jar tightly because the meat shrinks down a bit when water bath canned. It’s a good idea to add some fat into the jar not to discard it from the meat become it gives it an extra layer of protection you could say so it has a longer shelf life and flavor. You can always scoop off the fat when you open the jar before eating it for a healthier version. My parents and grandparents use to can like this in Europe when we lived on the farm and didn’t have any stores near by for many miles.
