  • One of the things I love about raw vegan foods is the endless options you have to upgrade all the foods that are not so good for us - Burgers, Pizza, Cheesecakes, Chocolate, Cheese, Dairy, Bread etc., into foods that are made from nature, in their whole form, so nutrient dense and healing for the body.
    This is one of those recipes.
    It's a great recipe to help you if you are ready to ditch the dairy and gluten and want a cheese substitute and bread (burger bun) substitute.
    Say goodbye to bloat and brain fog!
    Make my version of the Raw Vegan Mushroom Cheese Burger and be blown away by how tasty and filling it is.
    Plus I give you my secret cheezy cashew sauce recipe that I use in so many other ways too, like a base for a creamy mushroom pasta, bechamel sauce, a dressing and so much more.
    Here's the Insanely Delicious Raw Vegan Mushroom Cheeseburger Recipe:
    Serves 1-2
    Ingredients:
    2 large flat mushrooms
    1/2T tamari
    1/2T olive oil
    1/2T ACV
    Method:
    De-stem mushrooms and in a bowl combine ingredients and toss to coat mushrooms. Marinate for 20 minutes.
    Cheese Layer:
    Ingredients:
    1/4C soaked cashews, drained
    1T nutritional yeast
    Juice of half a lemon
    1/2 pinch salt
    1/2T olive oil
    1/2t garlic powder
    2T filtered water
    1T basil leaves (optional)
    Method:
    Combine all in a blender and blend until smooth. Add more water if needed to get a smooth
    consistency. Not too runny though!
    Topping for mushroom burger:
    Ingredients:
    Handful baby spinach or mixed green leaves
    1/4 sliced zuchinni
    1/2 sliced tomato
    1/8 sliced red onion (half a quarter)
    1/4 sliced cucumber
    1/4 avocado sliced
    Basil leaves
    Top with handful grated carrot
    Dressing to pour over once burger assembled:
    Splash olive oil
    Splash apple cider vinegar
    Method:
    To assemble place one flat mushroom in middle of plate and spread with cheese, then layer up veges and sprinkle with dressing. Serve with extra toppings of your choice. Enjoy!
