Gonna have to try this on some farm fresh eggs. Everytime I've made eggs that were straight from the farm, that membrane is so much stronger than a store bought egg.
Home raised chickens have it better. They get better feed usually than the big egg factories where profit is king. That makes better eggs in every way .
Also, if you do get a piece of shell in the eggs, the best way to get it out is to use the bigger piece of shell you already have in your hand to get it out. Works way better than any kitchen utensil you have

I just drop my eggs straight into the pan after I heat the pan up, toss the shells and finish letting the eggs cook. Works flawlessly every single time and I’ve been doing it for almost two years now

If you drop it from the right height it perfectly cracks the side that hit the pan and all you do is grab the shell and open it slightly to make sure all the egg comes out of the shell. Drop it from like 6-10 inches from the pan and it should work perfectly pretty much every single time

An ever better method is to do a Egg vs Egg mortal combat. Smash the eggs against one another and find the last egg standing. The curve is perfect at cracking the membrane, without getting small shells nor having to wash a seperate flat surface. Win+1

I don’t ever drop them, but that’s largely because I have a tendency to throw things and miss my target when I try to drop them. I do one small plate, one firm tap, one hand crack into a vessel, shells into the bin or other receptacle, repeat. That way I always have a clean hand for turning in the water and getting soap after cracking eggs.
Another point of note. You can easily simulate this by cracking an egg against another egg with minimal pressure. Additionally, if you ever get shell in a bowl, egg shells attract egg shells. And it will pick it up.
if you cannot get the piece of shell out with another piece of shell, wet a finger and just pick it out, or get a knife and use the sharp tip to capture the egg. However, I never understood until recently when chefs run sauces, custards and eggy liquids through a sieve before serving, it's to catch bits of lumps and bits off shell.
A word of advice. Put the pan under low (very low, with flames barely touching the pan. Put the butter (or spread of your choice) and wait for a little bit of bubbling. Then crack the egg in the pan and whisk to your hearts content (if desired). You will have a no waste egg. Enjoy!
Not the food industry but "home cooking". Having been a cook I a restaurant. Sunday morning breakfast crowd, didn't give us the "time" to .....drop an egg from a certain height, and then put it in the pan. Edge of the pan, plate even the stove still works fine for me!

@@deathdealer6347 There would be the same amount of germs if you cracked it on a bowl or just manually on a flat surface. You're cooking the eggs, it's fine. Even if you ate them raw, the 'germs' are the least of your worries.

I don’t ever drop them, but that’s largely because I have a tendency to throw things and miss my target when I try to drop them. I do one small plate, one firm tap, one hand crack into a vessel, shells into the bin or other receptacle, repeat. That way I always have a clean hand for turning in the water and getting soap after cracking eggs.

Another point of note. You can easily simulate this by cracking an egg against another egg with minimal pressure. Additionally, if you ever get shell in a bowl, egg shells attract egg shells. And it will pick it up.
Now I wanna get shells in my yolks to attract em with the rest of the shell :0
if you cannot get the piece of shell out with another piece of shell, wet a finger and just pick it out, or get a knife and use the sharp tip to capture the egg. However, I never understood until recently when chefs run sauces, custards and eggy liquids through a sieve before serving, it's to catch bits of lumps and bits off shell.

A word of advice. Put the pan under low (very low, with flames barely touching the pan. Put the butter (or spread of your choice) and wait for a little bit of bubbling. Then crack the egg in the pan and whisk to your hearts content (if desired). You will have a no waste egg. Enjoy!

Having been a cook I a restaurant. Sunday morning breakfast crowd, didn't give us the "time" to .....drop an egg from a certain height, and then put it in the pan.
