0:31 "Nikawa" is animal glue, made from skins, bones, tendons, etc. of animals or, in this case, from fish skin and bones. Though, it's the historical Japanese base product, for conservation is a problem as it will degrade over time. There are modern alternatives that are more stable.

2:49 You're wrong. You can do exactly the same as you're doing with the gofun using gesso: you can layer it (as many times as you want) and you can sand it to a smooth surface. You can even burnish it with a bone folder to make it shine. It all depends on the gesso you use. Obviously, as you state, the "acrylic" does NOT work, because it's a "plastic", not a true "gesso" (gypsum). If you try *real* gesso, then you can do whatever you want with it.

you say it cannot be done with acrylic priming, and i believe you, but i'm curious as to why not? can someone tell me?

Apply several coats of GOFUN and scrape it off with sandpaper.repeat this several times　Acrylic paint is sticky, so I couldn't scrape it off well.When I do classical crafts, I want to reproduce the coloring methods of those days as much as possible.

胡粉を塗って乾かしていたら、胡粉にひびが入ってしまったのですが、なにか原因などあるのでしょうか？

一度に胡粉を厚く塗りすぎるとか、膠が強すぎる、
木に亀裂があるなど、私も出そうな所に和紙を張ったりします
