For the people that want to know: Wafer paper will be used in regions where being thin is a primary concern. Gum-paste/flower-paste will be popular in regions with less nutritional education in the lay population. None of them are used in regions with high nutritional education in the lay population and economic downturns.
Floral tapes are non toxic so I usually wrap them to cover the wires before inserting in the cake. However, if you are still worried, you may also insert a straw first (or have a thin layer of aluminum foil wrap around the flora tape for extra protection), so the tape do not directly touch the cake. Hope this helps!

Is gum paste floral wire and gum paste floral tape safe to put directly onto cakes or even to stick into a cake?
