I don't think a dating site for people who can't have gluten is that bad of an idea. Ideally you'll want that relationship to go somewhere after all and adjusting to somebody who can't have gluten takes a lot of changes, so if both partners already don't have gluten, it's very practical because neither needs to adjust to it. that.
