So Rachel grabbed the ring and put it on when both men were gone because she loved the ring so much. That’s why Ross is confused as to why she knows about the engagement ring and Phoebe keeps pressuring him to be together. Phoebe loves Ross and Rachel a lot and wants them to be together by the end. She was very supportive of them by the last few seasons. Truly a best friend.
