I've tried many these puffed rice cake vendors around town and can vouch for this gentleman's quality product. He's the best. I think it's how he control the temperature of both the rice and the caramel, just enough of crunch and sweetness. My favorite is the brown rice with peanuts. At this location, right in front of the Peking duck store he only open on Thursday and Friday afternoon in the West district of Taichung, Taiwan.

I love these. I used to buy it when I was in Shanghai in around 2008. The BOOM adds drama, it's also advertising. The first time I heard it I asked the neighbors , what was that? They told me and I went to buy a GIANT bag of it and shared with everyone. It's like rice crispie with caramel instead of marshmallow. Totally yummy and not expensive. I would buy a giant bag now if I could. Drool. I really enjoyed my time in Shanghai. Great city.
In real world we call it honest hard working men bravo.

I've seen it live. According to him, the pressure makes the rice puffier. If you buy it normally, the rice is not as puffy. This one is on another level. 2nd of all, that Kaboom is loud af. Lol. Dude must be immune to it by now. Real nice hard working man

小时候大陆也有这种小吃,是流动性质的,叫崩爆米花,每到最后出锅的时候,老师傅都会一样吹一个哨子喊一声“响喽”,然后孩子们就会一窝蜂的围上去,递上小手里面的零钱,争先跟老师傅拿爆米花。爆米花分两种一种是苞米的一种是大米的,可以要甜的也可以要原味的。你也可以自带家里面的苞米或者大米,师傅只收手工钱。可惜现在在城市里面见不到这种行当了。

It looks like a very sacrificial job. It must be hard to do a job like that all day, every day and maybe earning very little money, but you can see that this Man does his job with love. The products looks tasty and perfect, way more better than an industrial one for sure !

Haha, that's too much. In Taiwan it's $100 NTD a bag. About $3~4 USD a bag and you can enjoy that traditional snack with 2or 3 family members for one week.

This is basically how puffed rice cereal is made too; the process is called gun puffing because a civil war cannon was used to perfect the technique. The cannon acts as a high pressure chamber that stops the rice from turning puffy from the heat (like popcorn) because of the pressure. When he releases the pressure, the starch is allowed to poof up into puffed rice!
I remember seeing the device he uses (not quite so modified though) on mythubusters "the fastest way to make popcorn". It's quite loud when the pressure in these pressure vessels are released so it's nice to see him blow a whistle to warn people that he's about to do it so no one calls the cops thinking something just blew up
