It's the whole interaction experience that really feels like I'm a part of the character's journey as well. DB: Kakarot is a great game but it's lacking in that department, nothing really stands out from a boss battle vs a regular battle to me

In that case, why not just make it a cutscene(i.e., a dramatic finish)? The worst part of beating a boss and having to do a QTE is when you have 0.5 seconds to input 5 commands, die, then have to do the _entire_ boss fight all over again.
I prefer the souls approach of "Boss has a super cool move or super cool final form at very low HP" so you get to actually have the big dramatic finale as part of the game instead of a glorified cutscene
Metal Gear Rising Revengeance had the best fucking way of finishing off boss battles you actually felt like a beast doing them. The music kicked in at the right moments too

honestly, this is a very legit good concept. This would even make it so dramatic finishes aren't skipped, and for the opponent to have that little hope that he might come back to fight. This would be an awesome implementation.
I clicked on this thinking it would just be a quick meme, but it's actually content. I'm shocked and amazed. I loved how Gohan had to right his inner demons (which were very clearly Goku) in order to muster the courage to face Cell. And Gogeta charging up a full 7 levels of super meter to unleash the giant explosion were honestly great ideas. Excluding the silly stuff like playing Sonic or Smash Bros, this actually would've been a great idea to make the Story Mode boss fights a little more entertaining and challenging. I'm actually kinda disappointed that isn't the case now.
OMG THIS IS COOL BEYOND WORDS The Gohan and Gogeta scenes were particularly outstanding. I would like so much to see more of these. I feel that the Janemba Finish has a lot of potential for a Quick Time Event edit.
After watching Super Brolys dramatic finish like this...the base one is ruined for me. Something about hearing "THIS NEXT ONE'S GONNA WIPE YOU OFF THE FACE OF THE PLANET!!!" just hits all of the right spots, especially with the music, build-up and pay-off! Excellent editing work!
