How to make Buttermilk Scones

  • Mrs. Salisbury’s Buttermilk Scones
    Preheat Oven: 400 Degrees
    Bake for 12-13 minutes (check side of scone)
    Serves: 8
    2 ¼ c all-purpose flour
    1 T sugar
    2 t baking powder
    ½ t baking soda
    5 T cold salted butter
    ¾ cup buttermilk or ¾ c milk PLUS 2 t lemon juice or vinegar
    (1 egg white with 1T water for glaze)
    In a medium sized bowl, combine the flour, sugar, baking powder, baking soda and stir with a whisk. Using your hands or a fork, cut the butter into the flour mixture until the size of small peas. Do this quickly to avoid warming the butter. Make a well and pour the buttermilk or sour milk in the middle and stir. Lightly knead dough in the bowl.
    Do not overwork a quick bread!
    Place plastic wrap on the counter, lightly flour. Cut dough in ½ and knead lightly to form a disk 1 inch thick. Cut into (4) equal pieces. Repeat for remaining dough. Place on an ungreased baking sheet.
    Mix 1 egg white with 1 T of water and brush on top of scones for a shiny finish.
    Sprinkle with sugar.
    Bake for 12-13 minutes (check side of scone)
    Split, butter scone, top with jam.
    Serve and Enjoy!
    * Scone triangle dough may be frozen in a freezer bag. Drop oven temperature to 375 degrees and bake for 15-18 minutes. Check the sides of the scone to see if done.

    weight measurements please in kg and grams
    as cups around the world are so different in size and spoons also

      Totally. Only in the US haha they refuse to use weights.
      Also humidity can affect volume

      Here is my refrigerator jam recipe:
      1 Granny Smith Apple
      1T lemon juice
      1 C sugar
      2 C berries (cut)
      1C water
      Quarter an apple and core.
      Grate apple and peeling add lemon juice and water
      Bring to a boil in saucepan for 7 minutes (this will make pectin to thicken jam)
      Strain into bowl
      In the same saucepan, add pectin from apple, 1 C sugar and 2 C cut berries
      Stir with wooden spoon.
      Bring to a rolling boil that cannot be stirred down and then boil for 2 min. Pour into bowl and let cool.
      Refrigerate after jam is cool
      Enjoy!

      I agree. I just bought a piece of canvas for making bread and pastry. It will work great for scones too. I just take it outside and shake it out.

    Gosh why all the plastic, encouraging everyone to use more when you should be washing your hands and cleaning down the work surface or use a board. The planet is choking, right now forest fires everywhere across the globe due to global warming so please be sensitive and not so smug about your laziness. Or better still re film it without the smug advice to use plastic.
