Oh my goodness, it was soooo delicious!!!! The Basil, parsley, celery and garlic, they all made such good flavors for the other vegetables! I added a little bit of nutmeg (about 5 grams to the recipe provided) and it tasted absolutely incredible! This was a fantastic recipe as promised, I cannot wait to make your Octopus Linguini for my next pasta party!

I often cook one pasta and vegetable meals. My nonna taught me her green beans, vegetables and pasta thick soup in the mid 1990s. I use that basic recipe as the base for about 60% of my cooking. It's fantastic. I change the basic green beans and vegetables to whatever legumes and vegetables I have on hand. I often cook in bulk and freeze the extra leftovers. I cook cucina povera about 90 years after the great depression.
Now that’s my kind of soup! Every thing but the kitchen sink! Hearty, healthy, simply delicious looking meal. Don’t forget a big chunk of rustic bread 🍞 slathered in some sweet salted butter! Yummy 😋!
I omit the pasta, the potatoes and the beans when I use this minestrone as an all-day-all-hours snack (You could also blend it until it's nice and creamy). I put them in when I need a meal. Love this recipe, especially with a bit of chili!

Made this again last night. Didn't have any pumpkin, but we have a local Asian market so I used Red Kuri squash. So easy and delicious - served it with garlic bread on the side for dunking.
Oh man this looks out of this world delicious. I'm seriously thinking of trying this out next week when I can get to a good vegetable market. Only problem is getting Pumpkin probably, and maybe those squashes (I think that was squash he used, it had a different name I've never heard of before). Still, love you Gennaro! You are so awesome! ***** It was really good! I ate with my friends and they were impressed :D Although, as the only kind of pasta I had was spaghetti, I decided to use that and just mush it into smaller pieces. I thought I would put them in a plastic bag and then break them in there. Well little did I know the pasta would break the bag and end up all over my kitchen! Oh well I'm wiser now. The soup was delish nontheless :D

i find that carrots and potatoes together are a good substitute for pumpkin! the carrot gives a similar sweet taste and the potatoe gives the tender starchiness. just add a bit more of those in the minestrone and youll be fine ;) also i think minestrone is a wonderful recipe for using up any kind of veg, especially root vegetables! so use whatever feels right to you, it will surely taste delicious :D

100g Broad Beans
1 Onion
1 Celery Stalk
100g Courgette
1 Leek
1 Broccoli
3 Potato
1 small Pumpkin
1 large Carrot
1/2 Cabbage
20 cherry tomatoes

3 clove of garlic
6 Parsley Stalk

My dad always browned a little bit of panchetta (bacon is fine) before putting in the veggies. Gives extra fond and a lovely meaty background! :)

This looks delish, only thing I'd struggle to get is Pumpkin, only time I ever see them (even in the big supermarkets) is October.
Butternut squash is a great substitute for pumpkin. It is usually available in big supermarkets year round.
