@@rush2sk8 They're adding flavor, I think. Not what I had in mind. I like seeing the prep-work and pan and griddle work. Practice and good technique from people who do it thousands of times a month.

If you are talking about the bit at about 3:20, I think it didn't matter too much if the roots were left on or not, since they were just being deep fried to flavor the oil. (At least that's how it looked to me, but I'm no expert) I'm assuming that those were the trimmings from the prep, and once they were done being fried they were going to be pitched.
@@fenikso I guess I’m just a person who is too poor to waste anything. The roots are used to make broth with the rest of the root vegetables and maybe some leftover bones.
@@Lady_Crispr But that, I think, is exactly what they were doing: Using the scraps to make a flavored oil. Similar in practice to making the broth.
Hello Yummy Boy from Florida, USA. This was a cool video. Which leads to question about ingredients: could you use other meats like chicken, pork or shell fish for the protein components and for veggies like squash, tomatoes or spinach or potatoes? Could you substitute oyster or Worcestershire sauce instead of soy?

It's the law to wear protection for handling food - and the glove's do it. What you probably didn't catch was the removing of the shrimp digestive tract, before mixing and stuffing the mushroom caps before frying. The people that are cooking this food are also the one's who's going to be eating it and sharing with customers and family. So no shrimp poop !!! I wish you were here in Canada, look up London - Ontario . Come on over and cook for the masses.PPPLLEEAASSEE!!!!!.
