Jacques is a national treasure. If I had to choose one celebrity chef to teach children to cook, it would be him. He's not bombastic, flamboyant, or edgy. He doesn't intimidate or posture. Instead, he conveys simplicity without dumbing-down the need for technique and good ingredients. He also does this FAST, in real time! But, his true magic comes from the way he weaves in the tradition, sentiment, and cultural significance of these foods. My mother is 92 and when she watches Jacques its as if she is watching a member of her own family. I wish we had more of this spiritual generosity in the programs we watch.
And the way he casually accepts that the Croque Madame has changed over the years...too many chefs have this ridiculous rigid thinking, that the first incarnation of a dish is the ONLY way it can ever be served, and here's this dude, a legit French gourmet chef, just casually brushing it off like "yeah, things change, whatever"...so much respect
@@ViperT24 I agree in principle, but what you suggest couldn't be an absolute in history. Ingredients change over time due to a variety of reasons. Cuisine would never evolve and we would be eating the same stuff today that they had centuries ago.
I didn't know about Chef Pepin until I saw something where Anthony Bourdain mentioned him. Now I watch/ listen to his videos to calm my brain. What a treasure I missed out on but it's been great getting to know him the last few years through these videos. 😊

@Theseus9-cl7ol I do ok. Unfortunately I'm a disabled veteran so I can't really do any serious cooking anymore. My 26 year old son is my caregiver and I've been teaching him for nearly 20 years now and he's gotten very good. At this point I'm HIS sous chef. 🤭
And took the broken piece of ham he took from the cutting board and ate it. Hand to mouth. Cant do that anymore! French Chefs were always my favorite Chefs to work for. They are not afraid to teach you everything they know. And they really know how to enjoy their off time!

What I didn’t know is the ham and cheese toasties my mum made every Sunday night was French bistro dining while we watched Bert Newton on New Faces down here in Australia in the early 80’s. I’m now 51 and still eating classical French cooking! 😂

I also use a little dijon mustard and also enjoy it with a little bechamel for a creamier and more moist sandwich. I also r3ecommend Grueyre for the cheese, it goes great with the ham.
Addition by subtraction. It makes his Croque Monsieur better than others I've tried. Or any other cheese sandwich for that matter. As few ingredients as possible, and don't mess with it. And that holds true for for decades of his recipes I have made. His shows taught me how to cook. Started as a young man copying his recipes from a VCR. Now at old age, still coping his recipes from the internet. This still blows my mind.

Looks like the original recipe was like that, cooked on a fire wood stove. That's not what most customer would expect to be served nowadays. The béchamel version is good, but it's not something people often do at home, they usually eat it in a bistro.
Iron got a point: i'll maybe eat croque-monsieur 50 time per year at home (kinda my péché mignon,tired -> it's fast,good and easy to make,litteraly 1minute). If you make a bechamel at home,the time you take to make it is longer,it make a croque monsieur kinda to heavy,too rich for a little diner.(it's good,but with a salad one is kinda a complete meal on itself). Also comté is a good choice of cheese for a croque monsieur,i would recommand you to try with abondance and cantal.

The croque monsieurs that I ate in France were toasted like this, but there was a layer of bechamel and extra cheese on the top. So good!
