Westerners tend to use a rice that has a longer grain and less starch so it does not stick and clump together but it doesn't not work so well with chopsticks because of that, where as jasmine rice will stick together much more and is easily eating with chopsticks. Mexicans also use what is called 'sweat' rice for recipes like arroz con leche, a dessert item that is like a pudding. Finally some people use a wild rice (brown rice) but that is not really rice but just a grain that looks like it is rice. It has more fiber and takes longer to cook but is supposed to be healthier for you.
