The most interesting idea behind the position at 8:07 is that his analysis is correct that Rac1 exf3 Rxc3 is actually winning for white. After Qxc3 Rxe8 Bd8 Qxd8# I understand the depth is a bit much for a beginner. But when you drill yourself to take the position one move further you'll be able to find those brilliancies. Still, extremely strong progress for such a short amount of time playing. But it's also a good instructional moment.
Maybe is a little bit late, but an important thing in chess is understanding the position. I'm not sure if there is someone explainning this type of things, but when you push a pawn, you make 2 squares and the diagonal weak. If you know this, you can see that when your opponent pushed the f and g pawns the weak white diagonal towards his king was completely open. In the minute 2:38 you can do Qh5+, he has to move with his king, because otherwise you take the queen with your knight. He has to do Kd8 or Ke7, if Kd8 you go Nf7 forking the king and the rook, and if he goes Ke7, you go Ng6 forking the king and the rook (again). In that position if he takes your knight with the pawn, you can take his rook. All this tactics come just from the knowledge of the positions and is better for you to actually understand them, than to memorize openings or cheap tricks that your oponents will try to do. In your elo, if you understand the position, you'll be imposible to beat.

His c and e pawns are really overextended with very little support in that position so you should be able to win them eventually with the rook pair

And then you realize he can just block the queen with the bishop and then it’s protected by the king and you go “shit!” (In this scenario when I was a 1000, I would start hallucinating that it’s my rook and not my queen and that I can take with the rook and then the queen would just take the queen except the pieces in my mind and in reality start to conflict and I’m a goofball) Also, there is some potential for queen to g6 check thinking if he goes to f8 your rook delivers checkmate only to realized he has two blockers and then you go “damn it!”

It certainly is a more straight forward attempt at checkmate. Unfortunately, given that the opponent has like 7 minutes left on the clock, it might be too straightforward such that the opponent is able to see the attack more clearly and be able to effectively avoid it. For instance, Qe7 or Rh7 would neutralise that attack and give black tempo. A more complex plan keeps tempo (for white) and especially at these levels of ELO, might be overlooked by your opponent. Although that is probably true for all levels.

You gave up on that very good idea of pinning the queen to the rook too early, you can get another defender, either your queen or the rook immediately after castling and boom you get a rook. You got back to it but then he could defend or push the pawn
