  • Hi there! I’m back with another recipe that is perfect for meal prep. These Chicken Carnitas are packed with flavor and is so versatile. You can make a big batch of this chicken and use it in a variety of meals such as burrito bowls, taco bowls, salads, etc. The best part is that this recipe is 0 points on Weight Watchers. If you aren’t following Weight Watchers, this recipe is still great since it’s low calorie. Prep these in advance and enjoy throughout the week.
    -- Recipe --
    Chicken Carnitas
    INGREDIENTS
    • 2 pounds chicken breast raw
    • 1 cup chicken broth
    • 1 tsp cumin
    • the juice of 1 lime
    • the juice of 1 orange
    • 2 teaspoons cumin
    • 2 teaspoons garlic powder
    • 1 teaspoon onion powder
    • salt and pepper to taste
    • 1-2 chipotle peppers from the can
    • 2 tbsp adobo sauce from the can
    • cilantro
    INSTRUCTIONS
    1. Place chicken breast in a slow cooker. Add all the ingredients to the slow cooker. Cook on low for 5 hours.
    2. When chicken is done, gently shred.
    3. If you prefer more crunchy chicken, add to oven and broil 5-10 minutes or until chicken gets lightly browned edges.
    4. Enjoy!
