- Hi there! I’m back with another recipe that is perfect for meal prep. These Chicken Carnitas are packed with flavor and is so versatile. You can make a big batch of this chicken and use it in a variety of meals such as burrito bowls, taco bowls, salads, etc. The best part is that this recipe is 0 points on Weight Watchers. If you aren’t following Weight Watchers, this recipe is still great since it’s low calorie. Prep these in advance and enjoy throughout the week.

Chicken Carnitas
INGREDIENTS
• 2 pounds chicken breast raw
• 1 cup chicken broth
• 1 tsp cumin
• the juice of 1 lime
• the juice of 1 orange
• 2 teaspoons cumin
• 2 teaspoons garlic powder
• 1 teaspoon onion powder
• salt and pepper to taste
• 1-2 chipotle peppers from the can
• 2 tbsp adobo sauce from the can
• cilantro
INSTRUCTIONS
1. Place chicken breast in a slow cooker. Add all the ingredients to the slow cooker. Cook on low for 5 hours.
2. When chicken is done, gently shred.
3. If you prefer more crunchy chicken, add to oven and broil 5-10 minutes or until chicken gets lightly browned edges.
4. Enjoy!
