None of the grocery stores carried sour starch so I ended up ordering it from Amazon. It was totally worth it !!! One important note, is that I had to add more sour starch than the recipe called for in order for it thicken up. I waited 7 minutes and it was still pretty liquidity. I did end up having to put it in the blender to completely blend the additional sour starch. It WAS Absolutely yummy-licious gooey and cheesy !!!! Super impressed! !!!

    • @untamedwildhorse

I made it a 2nd time and I blended ingredients in a high power blender and used the microwave instead of the stove top and it thickened up much faster. I mixed it every minute and it was ready in 2 minutes!

@@ChefJana This is the first time I have seen fermented tofu and olive brine, as umami flavors, on youtube vegan cheese recipes.....from what I have seen online, mushroom powder, sauerkraut juice, and lactic acid powder ( if available) also replicate the cheese flavor. Of course, olives are usually preserved in lactic acid liquid anyways.

A few months too late, but, cheeses using tapioca starch or other such starchy thickeners tend to have not so good textures when refrigerated
(they can be kinda gross to eat cold) - but they're amazing when melted / heated.

Tapioca is another by-product of cassava, there is granulated and powdered.
tapioca is made in a very hot skillet, it can be with a savory or sweet filling.
