None of the grocery stores carried sour starch so I ended up ordering it from Amazon. It was totally worth it !!! One important note, is that I had to add more sour starch than the recipe called for in order for it thicken up. I waited 7 minutes and it was still pretty liquidity. I did end up having to put it in the blender to completely blend the additional sour starch. It WAS Absolutely yummy-licious gooey and cheesy !!!! Super impressed! !!!
I made it a 2nd time and I blended ingredients in a high power blender and used the microwave instead of the stove top and it thickened up much faster. I mixed it every minute and it was ready in 2 minutes!
@@ChefJana This is the first time I have seen fermented tofu and olive brine, as umami flavors, on youtube vegan cheese recipes.....from what I have seen online, mushroom powder, sauerkraut juice, and lactic acid powder ( if available) also replicate the cheese flavor. Of course, olives are usually preserved in lactic acid liquid anyways.
Yes, I enjoyed it very much. Turmeric does give it this gold shining color and the cassava starch creates the cheesy gooey consistency 🌻 It is the true cheese to think about, when smiling for the photo 🐧 Thank You so much, Jana 🦚⛷🏊♂️
Looks like everyone in the comments has the same sour starch problem as me. I tried translating it to German before I could figure out what it was 😅 This recipe looks fantastic, I can't wait to try it! Great video, thank you ✌️
How is this cheese after it’s refrigerated? Your recipes are always amazing. Thank you so much for all your trials and posting all your beautiful food!💖
A few months too late, but, cheeses using tapioca starch or other such starchy thickeners tend to have not so good textures when refrigerated (they can be kinda gross to eat cold) - but they're amazing when melted / heated.
I have ordered the sour starch from Amazon because it was not available locally. I'm so looking forward to making this cheese and making a grilled cheese sandwich on rye bread. Thank you for this!
Thanks ever so much for showing us. It is really helpful that you offer suggestions for alternative ingredient suggestions. Warm socially distanced hugs to you.
Tapioca is another by-product of cassava, there is granulated and powdered. tapioca is made in a very hot skillet, it can be with a savory or sweet filling.
That looked. pretty Yummy I Didn't know it was possible to make Cheese 🧀 without Cows milk 🥛 my daughter's will love this I'll try making the recipe with the Egg Plant tonight looked Awesome Thank You Chef Jana
Wow this is what I've been waiting for, thank you Jana, and I suppose a little alteration for lasagne white sauce, but this will work with cauliflower cheese, I might even add a little mustard to it :)
I just want to take a piece of baguette and dip right in!!! Will definitely try it!!! Although I love the millet one as well!!! With yeast flakes it's great as a cheese sauce!
Hi, I love your channel. I keep looking at your vegan cheese recipes and want to make them but I cannot find a kosher sour starch here in Israel. I also checked iHerb and nothing was listed. Can I use regular cassava flour or is tapioca starch better?
Jana, How much oil did you use to extract 400 ml of "milk"? In Brazil we call it sour flour and we also have sweet flour, a product derived from cassava. Thank you very much!
Chef Jana I received my sour starch in the mail today and very excited to make this recipe. I followed your instructions exactly and the mixture never thickened. 😞 The sour starch isn't expired or old either.
The same thing happened to me. I had to add more sour starch and put it in the microwave. It thickened up and looks just like the video after I put more sour starch and microvewaved it.
Hey your cheese seems delicious! Do you think you can substitute sour starch with potato starch?? Just bought it and I am eager to use it! haha Thank you! 🙏
This looks soooooo good - thank you for your creativity and for sharing ! I’m inspired to try immediately but wanted to know if I can substitute potato starch instead of the Sour starch?
So delicious 😋 made it today. The only thing is, that the cheese is a little runny. Still delicious. Wonder if I should use a little more of the sour starch 🧐
Hello Jana, I would love to make this cheese but i can not find any sour starch or tapioca starch. Can I substitute it with something else like cornstarch or potatostarch?
OK I’m trying this and I am probably about 20 minutes in and it still will not thicken like yours did. I even added another tablespoon of sour starch. I’ve lowered the heat and that might solve it!!!! Lost volume but now I know for future, low and slow
Hello chef. Thank you for all the lovely recipes! I tried your cheese recipe today and replaced the sour starch with equal amount tapioca starch. However for some reason the cheese wouldn't thicken. So I added more starch and finally it became very stretchy and not so good. I followed the exact measurements in your recipe. Do you have an idea what could be the problem? Thank you
@@Julia-b9x It didn't impact the taste and it turned out ok. Actually I think it was the almond milk. Chef Jana doesn't use almond milk so her recipes aren't tested with it. I tried the recipe again with oat milk and it thickened without adding extra starch. Much better1
Jana, on a previous video you showed sour starch as Polvilho Azedo, which I purchased through the internet. Is that the same as what you are now showing, Almidon Agrio????
Thank You! I am looking forward to making it. Not sure in what recipe as of yet. I am thinking something for Thanksgiving for my large family. Being Italian, I will be making eggplant, but more authentic style. Thank you for sharing! 👍 Happy Thanksgiving! 😘
Hi Jana ! I doubled the measures, but my cheese takes more than 15 min to thicken and doesn't seem to thicken at all☹️, I used ground tapioca instead, do you think that could be the reason ?

Can I use the starch from my washed flour?
Hello Jana, I would love to make this cheese but i can not find any sour starch or tapioca starch. Can I substitute it with something else like cornstarch or potatostarch?
Sour starch and tapioca starch is not availeble in my country - only potato and corn. Can you use those?
You mentioned a few more unconventional alternatives.... Nice.... 👌🏻😏
💜🍃Yum Thank you so much💜🍃✌
No problem 😊

Mine never thickened either, I had to throw it out. :(
@@Julia-b9x I’ll try again. It was good but only had a bit left over after milk evaporated. Mixed a bit of salsa in. My non vegan husband devoured it!
That looks deelish!!! If i use olive brine, how much do you recommend? Can’t wait to try!!
1 tablespoon ;)
@@ChefJana Thank you once again for your delicious recipes. What is the olive brine replacing?

Same here, it was far too liquidy. And I used the same starch she did. Some key piece of info is missing from this recipe.
@@Julia-b9x I had the same problem. I had to triple the starch amount before it would thicken.

She's clever and charming,We love aubergines, what did you spread on the aubergines vefofe you spread the cheese..Was it tomato paste?
It was tomato sauce... ;)
Great, thank you! Can I replace the lemon with vinegar (eg some neutral one such as white wine or rice vinegar) ?
Yes, absolutely! Just add a little less, Id say 1/2 teaspoon ;)

Could cornflour be used instead of sour starch?
As the black cat suggests it, this is not food this is exquisite witchcraft (in other terms culinary ART).
Ha! Poki the black kitty says hi! ;)
Looks excellent .How long does it last in the fridge in a good container ? Many thank Jana ..Have a great week :)👍🍆

Hi Jana ! I doubled the measures, but my cheese takes more than 15 min to thicken and doesn't seem to thicken at all☹️, I used ground tapioca instead, do you think that could be the reason ?
Definitely. Tapioca starch is not so strong binding as the sour starch. Add a bit more and it’ll take some more time to thicken actually;)
Mine never thickened and I used the same starch she used.
I found everything in amazon Germany 🥰

Kitty wants to come in and help u cook 😂🐱
I need to substitute the vegetable oil. Any idea's?
You can just skip it ;)

You could use more plant milk, or vegetable broth.

I did recipe to the T even yes with sour starch however it came out to liquidly400mL is too much maybe 275 mL or 300 mL would be better. Love ya !
