  • Bok choy grows as an annual in every hardiness zone in the U.S. It does best in cooler weather; Dry and hot conditions can cause bok choy to bolt prematurely. This vegetable is not as winter hardy as smaller leaved Asian greens, but it may be winter-hardy under cover in USDA Hardiness Zones 4 to 7 when there are mild winters.
    Bolting" refers to a plant putting forth a long stalk bearing flowers, which can change the taste of the plant and slow its growth. Green, leafy vegetables in particular tend to bolt in response to environmental changes, and they must be eaten as soon as they begin to bolt. Bok choy's leaves will turn bitter once the plant bolts.

    Here in SW Oregon our spring weather can be frozen at night and hit the 80s in May. I love bokchoi so I might have to give it a try.

    I eat the bolted ones (all mine bolted 😂😂😂) but it was still good! I boiled it and followed maangchi's recipe

    I grew these as seedlings in my greenhouse. Planted them in the garden covered with cloth. Yes I see the weather here was hot and dry. Okay I’ll grow in early spring next year.

    Are Bok Choy Flowers Edible?
    Bok choy flowers (and buds) are perfectly edible. The flower stalk itself may be too tough and fibrous, but the bright yellow flowers are tender and have a strong flavour.
    Bok choy is edible and safe to eat after it flowers, but the leaves will get increasingly more bitter and tough as it matures, making it less appealing for the kitchen. The sooner you harvest your bok choy after it starts bolting, the less bitter it will taste.

    If you harvest a few outer leaves at a time (like lettuce) on a regular basis, or cutting off the crown (like celery), will you prolong the bok choy from bolting and get to harvest several more times?

      It might slow it down for a few , but it will still bolt , if the weather is getting hot , or even if you don't water them enough , the plant stresses and bolts .. cool weather with less sun does the job ... Thank you so much for watching

    You can cut the flower to force it to continue to grow.

      unfortunately no , I did tried it before did't work .. basically the end of the plant cycle .. hot weather will cause this of most the time

    I noticed that you said the plant sends it’s energy to the flowers when it bolts. My question is what will happen if one removes those incoming flowers? Will it put the energy back into the leaves?

      Unfortunately no , the flowers means it's bolted due to weather or time line of the plant , basic the end of that book choy plant... If you break off the plant it wouldn't grow anymore, only what's left of it .. sorry

    I was toooo late and all mine bolted. I'll try to save some seeds for next year. I'm still going to eat what I can. Better than nothing.

    Mine just bolted, but I cut them right off at the bottom of the stem,it’s getting very hot now…I wonder if it will still grow more leaf or just keep going to flower ?

      Sorry to hear that. If it's bolted the plant is going to use more of the energy towards the flowers. The leaves are not going to taste the best or be the same , if you need seeds , you could leave one plant .. the rest just remove them and plant your summer plants .. replant until fall weather..

    No wonder my beautiful bok Choy has a bunch of flowers instead of more bushy green yumminess!!! It’s been in the steamy 90’s-100 degrees where I live 🤦‍♀️

      Yep that is super hot weather! You could let one of them grow to get some seeds from the pod later.. re plant them when the weather cools down

    Mine is in the shade and nights have been around 48 to 50 and mine are bolting they aren't even 6 inches . Pissing me off . I love bok choy.

      So sorry about that , same here I could never master the growing yet .. Too much or too little water can also cause bok choy bolting.. it's a very sensitive plant..

      @@Greentgarden funny part mine is in the shade and I keep it really well watered and it's been a little commonly cold here. We tried to install summer here but it said something about not enough memory. Lol lol

    I suggest, you may want to do research on the flower. You could possibly have a new market in your hands. As an up and coming herbalist, I steep the flower in tea, wonderful benefits. To think of the leaves are that beneficial, I can only imagine the healing properties in the flower using the right methods

    Thanks for the video! My Bok Choy has holes on them. I had sprayed neem oil but it didn’t seem to help. I’m sad cos they can’t be eaten. Is there anything I can do?

      You could mix soap and water, spray all over the plant in the early morning or evening, ( 2-3 times a week) sprinkle some used coffee grounds around the plant or you could Use Insecticidal Soap ( get the organic one on Amazon) hope this works 😬😬

      I've gone to using a product that is found in human applications for bug deterrent in my garden. It's called Diatomaceous Earth. You actually can find it in human toothpaste & skin care products! It's a dust that you sprinkle on the plant. It virtually "dries out" the bug and kills it that way. It's virtually non-toxic. In my opinion better working than most of your "natural" "organic" ways/products, but not as violent as things like neem because it's rinseable and still edible. Available at most garden centers.

      So when bok choy plant grows flowers ( bolting) It's basically the end cycle of the plant. Sorry Holly ! You could leave it for seeds or remove the plant.. I love bok choy but it bolts so fast

    My Bok Choy is bolting and i want the seeds, so can i grow more into the fall cooler weather? We already ate so much bok choy, so how to collect the seeds?

      after the plant is bolted , let it grow and The seed is housed in pods that you take when the husks turn brown and dry. This signals the seed is ready. Store seed in a cool, dry place until it's time to sow them.

      It's kinda tuff , cause the plant easily gets stressed out , could be due to weather, hot weather makes it bolt , or even if your watering is off , I try many times but Fail....

    Lol I just purchased a Bok Choy at the market and left it in fridge, saw that it was wilting. I put it in a cup of water to prevent rotting and lo and behold it started to flower a crazy amount. Thought it was a good sign 😄 didn't know what "bolting" was and how it's not a good thing
